Make Creole Shrimp Tacos

Bold Spicy Creole Shrimp Tacos
- 1 bag already cooked shrimp 12 oz. bag
- 1 tbsp. Extra Virgin Olive Oil
- 1 tsp. dried basil
- 1 tsp. oregano
- 1 tsp. cayenne pepper
- 1 tsp. ground black pepper
- 1 tsp. paprika
- 1/2 tsp. kosher salt
- 1 clove garlic minced
- 1/4 cup water
- Heat the olive oil in a large skillet over medium heat.
- Add the shrimp to the heated oil and cook for 3 minutes; stirring a few times to avoid sticking.
- Reduce the heat to low and instantly add the above ingredients in order starting with the basil. Stir and cook for 2 minutes then remove from heat.
- Assemble in a soft tortilla with your preferred toppings.
Tips and Notes / Most Noteworthy:
- I bought the already cooked shrimp. I would recommend removing the tail before "cooking" the shrimp.
- This taco recipe is great with fresh spinach, avocados, and grape tomatoes.
- Consider this recipe if you are also feeding a large crowd.
Epic Oven Roasted Beets – That Don’t Suck!
Oven Roasted Beets – Simple, quick, and easy to prep beets. Takes a little over 30 minutes in the oven. Made with only 5 ingredients. Best of all, my secret ingredient takes it to the top!
Why this roasted beets recipe works:
As you already know, I love an easy recipe. Especially one that’s easy, simple, and quick to make. And this easy beet recipe is no exception for many reasons. For starters, it contains only 5 ingredients; beets, olive oil, salt, pepper, dried rosemary– my secret ingredient. Can be prep in 15 minutes or less and taste good even the next day!
Do I need to peel a beet before roasting:
Yes. When it comes to roast beetroot, peeling the beets before roasting them will not only provide a smooth texture when eating, but it will roast easier in the oven.
How to roast beets:
I prefer to use fresh beets. Beets can be baked whole; with skin on or without peeling them. Just be sure to rinse the beets and remove any debris before cooking the beets.
You can roast them while wrapped in aluminum foil.
You can roast them at a high temperature between 400-425 degrees in the oven, this process will cook the beets faster – keep a close eye so they do not overcook. Or, you can boil the beets. Again, keep a close eye on them so they do not overcook.
Others have even steam beets. I too like it this way from time to time. If you cut the beets into cubes, they will steam within 15 minutes. Just add a little salt and pepper, olive oil or butter and you’ll have the perfect steam beets recipe!
For this oven roasted beets recipe, I roasted the beets in the oven at 350 degrees.
How long can you keep beets in the refrigerator:
You can store cooked beets in shallow airtight containers. Cooked beets can be stored in the refrigerator for up to 5 days. I would not advise going longer than 5 days.
What goes with oven roasted beets:
I often pair my roast beetroot recipe with baked chicken or with my roasted chicken with curry seasoning. Below are also some choices and other ways to prepare beets.

Easy Oven Roasted Beets Recipe
- 2 large beets peeled and sliced
- 2 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1 tsp dried rosemary
- 1/2 tsp ground black pepper
- Preheat the oven to 350 degrees. In a large bowl, combine all of the ingredients.
- Transfer the coated sliced beets to a lined baking sheet. Spread evenly.
- Bake for 15 minutes. Flip the beets and bake for an additional 10-15 minutes. Serve as a side.
What does a roasted beet taste like?Beets have an earthy flavor. However, in my opinion, they can be very sweet and absorbs any flavor you give them.
What do you do with beet stems:I always toss away the stems as I have not used them to prepare other dishes. Plus growing up I always saw my mother throw away the stems. What are the benefits of eating beets?Now, if you are wondering if (roasted) beets are good for you? The answer again, YES! The number one reason is that beets lower the risk of heart disease. Friends, we made it to another week! For those of us who are still on a healthy trend, I would like to share my Mixed Vegetables Mushroom Soup with you, which only takes 5 minutes to make on any given night and is made with just a few ingredients. When we think of mushroom soup we usually think of warm, creamy, crowd pleaser, full of flavor mushroom soup, correct? Not this one, but I promise it is as fulfilling.
To be honest, I do not make this soup often in our house. Hubby is the only mushroom lover in the family, so from time to time when he asks for something a quick and easy meal, this soup usually comes to mind.
This Mixed Vegetables Mushroom Soup is delicious and nutritious.
The key ingredients to make this soup are sliced mushrooms, beef broth or vegetable broth, and of course mixed vegetables (frozen vegetables are okay too).
Feel free to have this soup with some toasted garlic bread on the side, or pair with a light salad. Whatever your preference, this soup will not disappoint.
I love making soups or dishes that are done in one pot or between 15 – 30 minutes.
In my opinion, foods that are made between 15 – 30 minutes are usually inexpensive.
To make this soup, simply cover and cook for 15 minutes on medium-low heat. Serve warm and enjoy.

Mixed Vegetables Mushroom Soup
- 14.5 oz. beef broth
- ¼ tsp. ground black pepper
- ½ tsp. fresh rosemary
- 1 cup sliced mushrooms
- 1/3 cup frozen mixed vegetables
- ¼ cup chopped celery
- 1 tbsp. sliced green onions
- pinch salt optional
- In a small saucepan, heat the beef broth and frozen vegetables. Add all of the remaining ingredients. Cover and cook for 15 minutes on medium-low heat. Serve warm and enjoy.
- It is best to use low-sodium beef or vegetable broth if you plan to add salt.
