    This delicious and colorful Mediterranean potato salad will leave you fulfilled. It’s loaded with fresh herbs with just the right amount of dressing that will leave your taste buds craving for more. It’s perfect for summer BBQs.

    Also known as Green Goddess Potato Salad, this Mediterranean potato salad is a type of salad that includes a variety of herbs and green vegetables, giving it a bright green color and a fresh, herbaceous flavor. 

    The traditional ingredients for Green Goddess Potato Salad include boiled potatoes, mayonnaise, sour cream, chopped chives, tarragon, parsley, and garlic.

    Other possible additions can include avocado, cucumber, green onions, celery, or even bacon.

    The origins of Green Goddess Potato Salad can be traced back to the early 20th century when the “Green Goddess” dressing, made with similar ingredients, was popularized in San Francisco.

    To begin with, we don’t mind saying that the unique thing about this salad is its out-of-the-box name. Green Goddess Potato Salad, our version of this Mediterranean potato salad is unique because of its fresh, herbaceous flavor and bright green color.

    Unlike traditional potato salads that rely on mayonnaise or mustard-based dressing, this potato salad is made with Turnip Leaves, citrus and fresh parsley, olives, and Kosher baby dills.

    The combination in this salad gives the salad a bright, fresh flavor that is unique and appetizing.

    How To Make Mediterranean Potato Salad 

    This salad serves well as a side. The full recipe is listed in the recipe card below. Here’s what you’ll need to do to make this salad. 

    Cut the potatoes and half. Wash, drain, and bring to a boil over medium-high heat, in a large pot of water. Cook until just tender. Be careful to not overcook the potatoes.  

    Remove the potatoes from the heat once cooked and allow the potatoes to cool down.

    Cut the cherry tomatoes into quarters. Cut the cucumber into small cubes or dice. Cut the red onion into slices or dice. 

    Finely chop the parsley and the Mediterranean Greens (Turnip Leaves). Cut Olives in halves. 

    Cut Cornichons or Kosher Baby Dills (Pickles) into small cubes, or dice.

    Combine all of the ingredients in a large bowl. Add the Extra Virgin Olive Oil and seasonings. 

    Keep it in the fridge overnight.

    • 2 oz. or 2 Dills of Cornichon or Kosher Baby Dills Pickles; diced
    • Juice from 2 Lemons
    • Salt and Pepper to taste
