Generally only go with snow and king crab in the winter when we can’t get local blue crab. Have always steamed them in a salt water broth til piping hot. Wanted to tr it something different. We liked the butter dip but 8 minutes overcooked the snow crab legs in my opinion. The meat fell apart and was very dry.. Reduced the cook time to 4 minutes on the next batch and was much better. The snow crabs are cooked and flash frozen during processing so your only reheating them not actually cooking.
