Gather the ingredients: Prepare the shrimp. For this recipe, we used Jumbo size shrimp. Best to use shrimp that’s already deveined.
Preheat the air fryer for 5 minutes at 360º F if necessary.
Season the shrimp with salt and pepper to taste.
In a desperate small bowl, whisk the eggs.
In two separate plates, add the coconut in one plate and the flour in another plate.
Dredge the shrimp one at a time through the flour, then the egg, and finally the coconut. Set the shrimp aside on a plate and repeat with the remaining shrimp.
Spray the basket with olive oil, add the shrimp, then spray the shrimp with the olive oil.
Air fryer for 12-15 minutes (flipping halfway) or until golden brown and crispy.
Remove the shrimp and cook and serve with your desired sauce.

- My shrimps were large. It took me about 10-12 minutes to cook the shrimp completely.
- You don’t always have to heat the air fryer. However, it does help as the shrimp starts to cook the minute it touches the basket.
