    Apart from the advantage of fitting more stuffing, it is invariably difficult to stuff salmons that are thin and tall.

    While both farmed and wild salmon will work perfectly for this dish, our preference is wild salmon due to its natural flavor.

    Shrimps

    Up next, the second most important ingredient for this dish is the shrimp. The ideal shrimp for this dish needs to be deveined, cooked, and peeled.

    The size of the shrimps doesn’t matter as you get to cut them even smaller before cooking them.

    • During the baking process, you should watch out for albumin. Albumin refers to white spots that show up on the body of the stuffed salmon during baking. These white spots mean that the fish has been overcooked and needs to be taken out of the oven. Ideally, you should not bake the salmon for more than 15 minutes, but again it depends on the thickness.

    Storing and Reheating the Stuffed Salmon Rolls 

    Ideally, fish is perfect the day you cook it. Thus, it is not advisable to store this dish for more than a day.

    However, you can save preparation time and prep the fish the night before. This way, you can stuff the fish and store it in a refrigerator.

    To store the stuffed salmon, all you need to do is put the stuffed fish in an airtight container and put it in a fridge, after it cools down a bit. DO NOT leave it out overnight.

    You can reheat the dish after freezing or refrigerating. To do this, place the stuffed salmon on a baking sheet and heat the oven to about 300 degrees Fahrenheit.

    Allow the dish to cook for about ten minutes and you are good to go.

    Ingredients
      

    Shrimp Stuffing Preparation

    • 2 lbs Shrimp
    • ½ tablespoon Cajun seasoning
    • ½ tablespoon Onion powder
    • 1 egg
    • ½ cup Bread crumbs
    • 3 tablespoon Melter butter
    • 2 Garlic cloves
    • ½ teaspoon Celery seeds
    • 2 Fresh parley twigs

    Ragout Preparation

    • 2 tablespoon Tomato paste
    • ¼ teaspoon Ginger
    • ¼ teaspoon Cayenne pepper
    • 2 Garlic Cloves
    • 2 tablespoon Butter
    • 3 Fresh parsley twigs
    • 1 Small Onion

    Salmon Filet Preparation

    • 3 lbs Salmon filet no skin
    • 1 tablespoon Paprika
    • ½ Lemon juice
    • 2 tablespoon Dry basil
    • Salt and Pepper to taste

    Instructions
     

    • Seasoned the salmon on both sides with the ingredients under Salmon Preparation and set aside.
      Add the shrimp and all the ingredients under the shrimp preparation section with the exception of the bread crumbs into a food processor.
      Once fully mixed, removed from food processor and placed in a bowl. Add bread crumbs and combine with shrimp mixture.
      Using a cast iron skillet, melt the butter and stir in the tomato paste. Add the onions, ginger, garlic cloves, and cayenne pepper and stir in all ingredients under low heat until tomato paste is fully dissolved.

    • Cut the salmon fillet about 3-4 inches and stuff the shrimp mixture inside. Roll the cut salmon with the stuff shrimp inside and hold it with a toothpick.
      To make it easier, you can opt to cutting a small incision in the fillet and stuff the shrimp inside the salmon fillet all the way to the top of the fish without rolling it.
      Add the stuffed salmon in the ragout and bake at 320º for 30-40 minutes. If you see the white spots or albumin from the salmon, it means that the salmon is overcooked. Remove and let sit for 5 minutes before serving.
