    These pan-fried breakfast potatoes are next level! A delicious quick and easy potato recipe that’s cooked until they are tender but yet crispy on the outside. The potatoes are packed with delicious flavors arose from the onions and garlic. Ready in less than 30 minutes.

    How do you feel about potatoes? I know some people do not eat potatoes during certain time of the year, like summer. I don’t quite understand why, yet. But I love them!

    Potatoes are some of my all-time favorite vegetables to cook – they’re versatile, but still hearty, and they pair well with all sorts of seasonings, such as this Haitian seasoning.

    In my opinion, the key to loving potatoes of any kind is preparing them in the right seasoning as suggested. No need to over think them.

    Why Are These Potatoes So Delicious?

    • The potatoes are cut into bite size for even cooking. They are pan fried until crisp on the outside and tender on the inside.
    • They’re tossed with onions and garlic – Not to mention the fresh thyme! These ingredients bring the richness of the potatoes to light.
    • It might be hard to resist eating the whole thing straight out of the pan, but if you take the time to pair them with eggs, you’ll have a complete breakfast on the table that no one will be able to steer away from.

    You’ll want to start by gathering the ingredients. Dice, chopped, and trim the vegetables and herbs.

     Cooking the potatoes for 10 minutes, covered. Stirring occasionally to avoid burning.

    Then add the garlic, onions, salt and pepper as well as the thyme. Stir and leave uncovered.

    Increase heat to medium-high, and cook for an additional 10 minutes.

    Variations & Tips

    • Make sure you wash your potatoes before cutting them. The potatoes should be cut into as evenly as possible. 
    • You can boil the potatoes before frying them for 10 minutes. This will help ensure that the potatoes are fully cooked. Then fry them for an additional 10 minutes with the other ingredients.
    • Adding about 1 tablespoon of lemon juice will help to enhance the flavor of the dish.

    Ingredients
      

    • 4 Idaho Potatoes Diced
    • 2 Garlic Cloves Minced
    • ½ Cup Diced Onion
    • ¼ Cup Olive Oli
    • 1 Tsp. Kosher Salt Or to taste
    • 1 Tsp. Ground Pepper Or to taste
    • 5 Sprigs Thyme

    Instructions
     

    • Wash and cut the potatoes into bite sice, or diced. Set aside. Dice the onions and set aside.
    • Add the potatoes to the heated oil skillet. Cook on medium-low heat for 10 minutes, covered. Stirring occasionally to avoid burning.
    • Remove the cover, add the onions, salt and pepper, thyme, stir and cook uncovered for an additional 10 minutes. Stirring occcasionally to avoid burning.
      Remove from heat and serve as a side.
