You’ll want to start by gathering the ingredients. Dice, chopped, and trim the vegetables and herbs.
Cooking the potatoes for 10 minutes, covered. Stirring occasionally to avoid burning.
Then add the garlic, onions, salt and pepper as well as the thyme. Stir and leave uncovered.
Increase heat to medium-high, and cook for an additional 10 minutes.

Easy Breakfast Potatoes Recipe
Ingredients
- 4 Idaho Potatoes Diced
- 2 Garlic Cloves Minced
- ½ Cup Diced Onion
- ¼ Cup Olive Oli
- 1 Tsp. Kosher Salt Or to taste
- 1 Tsp. Ground Pepper Or to taste
- 5 Sprigs Thyme
Instructions
- Wash and cut the potatoes into bite sice, or diced. Set aside. Dice the onions and set aside.
- Add the potatoes to the heated oil skillet. Cook on medium-low heat for 10 minutes, covered. Stirring occasionally to avoid burning.
- Remove the cover, add the onions, salt and pepper, thyme, stir and cook uncovered for an additional 10 minutes. Stirring occcasionally to avoid burning. Remove from heat and serve as a side.
