I’m so excited to share the good news with you about the secret ingredient I used in this skillet breakfast potato recipe. I am very pleased to bring you one of my favorite breakfast side dishes. These kielbasa and potatoes are easy to whip up and are perfect with a side of eggs.
I used the bitesize medley potatoes from Aldi. I brought out my skillet and started cooking these little babies. They are perfectly golden and is packed with flavors from my secret sauce.
Remember when I brought you my honey mustard chicken recipe? Well, these potatoes include the same sauce or mixture I used in the chicken.
Here’s the quick story behind the potatoes. After I prepared the chicken, I had some of the honey mustard mixture left over. Of course, I did not want to waste a perfectly good sauce. Luckily it was time for breakfast. I cut up the potatoes, sausage, and spinach and cooked everything in the skillet. Scrambled some eggs, and cut up some fruits, and breakfast was served in 30 minutes.

Breakfast potatoes are easy to pair with almost any breakfast item. For example, my son made these incredibly delicious zucchini waffles, this past weekend I made these skillet breakfast potatoes again and paired them with the waffles. GENIUS! How to make breakfast potatoes (kielbasa and potato)?
Let’s start with the honey mustard mixture. The mixture requires little to no technique. Simply combine the water, garlic, mustards, and honey and set aside. Click HERE for full recipe.
Cook the kielbasa sausage in a tablespoon butter and set aside. Then cook the potatoes in the same skillet for about 10 minutes or until fork through. Add sausage, spinach, and honey mustard mixture. Combine well. Add spinach and cook for a couple more minutes. Serve warm with eggs, waffles, French toast, or your favorite breakfast items.

- 1 Pk. Kielbasa Sausage
- 1 tbsp. butter
- 2 cups spinach
- 1 ½ cup medley potatoes
- Honey mustard mixture
- Cook the sausage in a tablespoon butter and set aside.
- Cut the potatoes in half, then cook the potatoes in the same skillet for 10 minutes. Add sausage and spinach and honey mustard mixture. Adjust the measurements according to the serving size, it is best to reduce the water portion to 1/4 cup. Combine well. Add spinach and cook for a couple more minutes. Serve warm with eggs, waffles, French toast, or your favorite breakfast item.
