- 6 cloves garlic; minced
- ¼ cup diced onion; Use regular yellow onion do not use sweet onions
- 8 oz wild wonders tomatoes; sliced in halves. You can also use cherry tomatoes or grape tomatoes.
- 4 cups Water; You may also use vegetable or chicken broth but it not necessary.
- ½ teaspoon red pepper flakes or more if needed; This is optional but ads a little heat.
- ⅓ cup Shredded Fontina Cheese;To enhance the creaminess but this is optional.
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add the garlic and onion, and sauté for 3-4 minutes until they’re fragrant and softened.
- Add the Tomatoes and Season: Add the sliced tomatoes and season with salt and pepper to taste.
- Add the Spaghetti and Water: Break the spaghetti in half (if needed) and add it to the skillet, then add the water, making sure the spaghetti is submerged in the liquid. Bring the mixture to a simmer.
- Cook the Pasta: Cover the skillet and let the spaghetti cook for about 10-12 minutes, stirring occasionally to prevent sticking. If the sauce gets too thick, add a splash of water or broth.
- Finish and Serve: Once the pasta is tender and the sauce has thickened, add the cheese and stir lightly, remove the skillet from the heat. Garnish with fresh basil or parsley, and sprinkle with more cheese (if desired) before serving.
