Instructions
Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add the garlic and onion, and sauté for 3-4 minutes until they’re fragrant and softened.
Add the Tomatoes and Season: Add the sliced tomatoes and season with salt and pepper to taste.
Add the Spaghetti and Water: Break the spaghetti in half (if needed) and add it to the skillet, then add the water, making sure the spaghetti is submerged in the liquid. Bring the mixture to a simmer.
Cook the Pasta: Cover the skillet and let the spaghetti cook for about 10-12 minutes, stirring occasionally to prevent sticking. If the sauce gets too thick, add a splash of water or broth.
Finish and Serve: Once the pasta is tender and the sauce has thickened, add the cheese and stir lightly, remove the skillet from the heat. Garnish with fresh basil or parsley, and sprinkle with more cheese (if desired) before serving.

Notes
Use a Large Non-stick Skillet: Make sure your skillet is large enough to hold all the ingredients comfortably. This prevents the pasta from sticking together. Stir Occasionally: Stir the pasta every few minutes to ensure even cooking and to prevent it from clumping.
Don’t Overcook: Keep an eye on the pasta as it cooks. You want it to be al dente, with a little bite to it. The pasta will continue to absorb the liquid as it sits.
If you are gluten-free, you can also use gluten-free pasta, but to help with the creaminess, I suggest adding some cream, cheese, or butter to make it creamy.
For this recipe, I had some chili-flavored oil, and I decided to use that instead of regular olive oil. It made a huge difference in the dish.
