Prepared with rich, decadent melted chocolate chips, vanilla extract, and a hint of espresso to tie it all together. Then, topping it off with your favorite vanilla ice cream and raspberry or fruit of your choice.
Ultra-Delicious Chocolate Fudge Brownies
Hard days deserve a sweet finish. Bland and boring dishes need to be uplifted with something that screams comfort, home, sanctuary, and most certainly should be something special. Here, we introduce these fudgy chocolate fudge brownies.
Dating back to the mid-to-late 1800s, brownies as we know them today have changed a number of times. Started as a bar brownies did not always have a glossy top on their upper crust and did not always include chocolate, rather included brown sugar and vanilla.
Not until the late 1890s when Bertha Palmer tasked one of her chefs to create a dessert that was suitable for women attending the World’s Columbian Exposition, where it could easily be placed in a box but was smaller than cake-size. This is where the famous brownie was created, which also included nuts and glaze.
Key Ingredients Needed To Make This Recipe
To make the perfect brownie recipe, here are the key ingredients you’ll need:
Melted Chocolate Chips: I highly recommend using good-quality dark chocolate chips.
Vanilla Extract: This will help to enhance the flavor of the other ingredients, especially the chocolate and coffee.
Sugar: Best to use a combination of brown sugar (you can also use light brown sugar) and granulated sugar.
Butter: I highly recommend you use unsalted butter so you can control the salt level.
Espresso (or you can also use Unsweetened Cocoa Powder): While making these brownies, I used dark chocolate chips and espresso to enhance the chocolate flavor.
If you don’t have espresso, instant coffee grounds will work as well. If you don’t want to use espresso or coffee, you can opt for unsweetened cocoa powder.

Making Chocolate Fudge Brownies
From start to finish, this recipe is a breeze to make with our step-by-step instructions.
Start by preheating the oven to 350 degrees. Next, prepare the ingredients. Then, line a 9-inch. square baking dish (or equivalent) with parchment paper and allow the ends to hang out on the sides. Set the dish aside.
Coating the parchment paper with the oil on both sides helps it stick to the pan or baking dish. See the video in the recipe card.
In a large bowl, whisk together the all-purpose flour and salt (I used kosher salt). Set aside.
In a medium heavy saucepan, combine sugar, butter, espresso powder, oil, and water. Bring to a boil and stir constantly. Once the ingredients are dissolved, remove the saucepan from heat; add the 1 ¾ cups chocolate chips and stir until melted and cool slightly.
In a large bowl, whisk the room temperature eggs until foamy, about 3 minutes. Add the vanilla extract and gradually whisk the chocolate mixture.
Next, fold in the all-purpose flour mixture.
Pour the chocolate fudge brownie batter into the prepared baking dish, spreading it out evenly but not patting it down. Add a few more drops of chocolate chips on top.
Bake on a lower rack for 45 minutes or until the toothpick, when inserted in the center, comes out moist and with small visible crumbs. Be sure not to overbake. Cool completely in the pan.
Allow the brownies to cool in the pan before cutting. Remove the brownies from the pan or baking dish by lifting the parchment paper, and cut them into squares. Place in a bowl and serve with your favorite ice cream and raspberries.
How To Tell When Brownies Are Done?
This will be your favorite brownie recipe! Whether you’re a novice baker or not, the best way to tell if the brownies are done is to stick a toothpick in the center of the brownie, hold it for 2 seconds, and then pull it out.
Cooking Time Does Matter and So Does Consistency
- If you are looking for a super gooey brownie, then cook the brownie for 24 to more than 30 minutes. It will give the appearance of “not done”. This will have a lot of smears, or the brownie will be very runny.
- If you are looking for something that resembles cake but still has the texture of a brownie, bake the brownie for about 30-50 minutes. Insert the toothpick, and if it comes out clean with just a few crumbs. You are good to go! But be mindful that this may result in a dry brownie with a cake-like texture.
- If you are looking for a moist and fudgy texture (which is what this recipe calls for and my personal favorite), bake the brownie longer, 45 minutes. Insert the toothpick, and when pulled out, it will be coated but not too wet with chocolate.
Recipe Notes / Tips
To ensure that your chocolate fudge brownies are neatly sliced, we recommend warming a sharp knife by placing it under running hot water.
After drying the knife, immediately proceed to slice the brownies as soon as possible. Because of the warmth, the knife will be able to slice through the brownie cleanly and easily. Clean the knife with a warm, damp cloth and repeat the cutting.
Allow the brownies to cool before cutting into them. This will allow the brownies to set. Of course, you can always cut the brownies while they are warm; just be mindful that the brownies may be slightly runny.
To test brownies to see if they are fully cooked, you can use one of these two methods to determine whether brownies are fully cooked. The first way involves gently shaking the pan.
If the brownie wobbles in the middle, it’s not quite done; slide it back into the oven and continue baking. Bake until the topping is golden brown and the sides begin to pull away from the pan.
The other option is to use a toothpick; if it comes out clean (for a cake-like texture), you’re done. For a fudge texture, the toothpick will be slightly wet (see remarks above).
