Why It’s Amazing
Three words come to mind when describing this dish: quick, simple, and tasty! As stated, slightly on the healthy side, this beef bok choy stir fry stands out for its balance of taste, texture, and nutrition. It also comes together in no time.
Prepared with simple ingredients to create bold flavors. The star ingredient, bok choy, is rich in vitamins A, C, and K, along with calcium and antioxidants, making it a nutrient powerhouse.
The dish becomes a complete meal with the addition of beef, which is a great source of protein, iron, and B vitamins. Second, this recipe is all about paying homage to stir-frying. This technique preserves the ingredients’ natural flavors, textures, and nutrients.
The high heat in stir-frying caramelizes the beef and brings out the bok choy’s natural sweetness, making every bite a delight.
Key Ingredients Used To Make This Recipe
Adding other vegetables like carrots, bell peppers, or mushrooms can tailor the stir fry to suit your preferences. The sauce can also be adjusted by adding chili for heat, honey for sweetness, or sesame oil for an earthy aroma. It’s a quick-cooking dish, making it a go-to choice for busy weeknights while still feeling like a restaurant-quality meal.
To keep this meal budget-friendly, sticking to a sauce that’s created with pantry staple ingredients can go a long way as well as create a perfectly balanced flavor profile.
To make this recipe some of the key ingredients you’ll need are:
Beef strips: from the local grocery store, you can find already-cut beef strips that are tailored to stir fry. Or you can purchase sirloin steak, chuck steak, tri-tip, or flank steak. All of which are less expensive but have good flavor. They are easy to cut into strips and cook within minutes.
Crisp Baby Bok Choy: Best to use fresh bok choy. I like to baby bok choy because it allows me to keep the leaves whole if desired. Look for bok choy that has a vibrant green color and that is with crisp stalks – this will make all the difference when transforming your dish!
Water chestnuts and bell pepper: The water chestnut and bell pepper add more crunch to the dish.
To keep this dish from being complicated, the trick is to prep all your ingredients beforehand which will make the process seamless.
Ingredient Substitutions or Additions
If you don’t want to use soy sauce, Worcestershire sauce will work well. Though it is different from soy sauce, the flavor combination with the other ingredients will bring some excitement to the dish.
Consider adding a dash of oyster sauce and possibly a sprinkle of sesame oil at the end to bring in some natural Asian flavors. Use cornstarch and soy sauce to marinate the beef prior to cooking it.

Instructions
- In a small bowl prepare the roux. Combine the cornstarch and water together. mix well and set aside. Over high heat, heat a large heavy pan or wok and add the oil. When oil is hot, add beef in a single layer and sautee undisturbed for 2-3 mins. Stir and sautee another 2 min or until nearly cooked through. Best to work in small batches. Or you can add the remaining ingredients as the meat cooks.
- Add in the parsley, bell pepper, and green onions. Continue to stir to avoid sticking at the bottom of the pan or wok. If the liquid is too much, continue cooking until the liquid has evaporated slightly. Add in the soy sauce and tomato paste. Stir to mix well. Then add in the water chestnut. Then add in the slurry. Allow to simmer for about 5-7 minutes. Then add the chopped baby bok choy. Mix well to combine. Allow the vegetables to cook to your desired crunchiness or texture.
