Beef Bok Choy Recipe - Savory Thoughts

Ingredients

  • 1.14 lb. Stir Fry Steak
  • 1 Cup Water
  • 2 Tbsp. Soy Sauce
  • 2 Tbsp. Tomato Paste
  • 1 Tbsp. Minced Fresh Ginger
  • 3 Garlic Cloves; minced
  • 2 Tbsp. Cornstarch
  • ¼ Cup Olive Oil or Grapeseed Oil
  • 1 lb. Baby Bok Choy; Chopped
  • 8 oz. Sliced Water Chestnuts; drained
  • 2 Green Onions; Chopped
  • 2 Tbsp. Chopped Parsley
  • ½ Bell Peper; any color. chopped.
  • Cooked White Rice For Serving

Instructions

  • In a small bowl prepare the roux. Combine the cornstarch and water together. mix well and set aside. 
    Over high heat, heat a large heavy pan or wok and add the oil. When oil is hot, add beef in a single layer and sautee undisturbed for 2-3 mins. Stir and sautee another 2 min or until nearly cooked through. Best to work in small batches. Repeat the process as necessary. Season the meat lightly with salt and pepper to taste. 
    At this point, you can let the meat caramelize slightly which will give you a beautiful brown color. Or you can add the remaining ingredients as the meat cooks. 
    Cooking beef and vegetables
  • Add in the parsley, bell pepper, and green onions. Continue to stir to avoid sticking at the bottom of the pan or wok. If the liquid is too much, continue cooking until the liquid has evaporated slightly. 
    Add in the soy sauce and tomato paste. Stir to mix well. Then add in the water chestnut. 
    Then add in the slurry. Allow to simmer for about 5-7 minutes. Then add the chopped baby bok choy. Mix well to combine. Allow the vegetables to cook to your desired crunchiness or texture. Serve with white rice and topped with oyster sauce, sesame seed, and oil if desired.
