Lemon dill rice recipe – Rice is one of those ingredients that quietly holds a meal together. In my kitchen, it’s rarely just plain rice. I love adding herbs, citrus, and simple ingredients that transform a pot of rice into something flavorful and memorable.

This lemon dill rice recipe is one of my favorite ways to do that. It’s fragrant, bright, and incredibly comforting. The lemon adds freshness, the dill gives the rice a beautiful herbal aroma, and the garlic builds a savory base that makes every bite satisfying.

The sweet, dried cranberries (if you include them) provide little bursts of tangy flavor that contrast beautifully with the herbs.

It’s simple enough for weeknight dinners but flavorful enough to serve alongside roasted meats, air fryer sea bass, or grilled vegetables.

Why Lemon Dill Rice Works So Well

There’s something magical about combining citrus and herbs with rice.

The lemon brightens the dish without overpowering it, while dill adds a slightly grassy, aromatic flavor that pairs beautifully with garlic and olive oil.

Together, these ingredients create a rice dish that tastes fresh, vibrant, and comforting all at once.

It’s the kind of side dish that quietly steals the spotlight on the plate.

The Secret to Light and Fluffy Rice

If you want your rice to turn out perfectly every time, don’t skip rinsing it.

Rinsing basmati or jasmine rice removes excess starch from the surface of the grains. This helps the rice cook up light, fluffy, and separate instead of sticky.

Another important step is letting the rice rest for a few minutes after cooking before fluffing it with a fork. This allows the steam to finish cooking the grains gently.

It’s a small detail that makes a big difference.

The Flavor Combination That Makes This Rice Special

This recipe may be simple, but every ingredient plays a role.

Olive oil adds richness and depth.
Garlic gives the rice a warm savory base.
    Dill provides an herbal brightness.
Lemon juice ties everything together with fresh citrus flavor.

Then the dried cranberries bring a little sweetness and color that makes the rice feel lively and balanced, and the tartness that make the dish even more interesting.

What to Serve with Lemon Dill Rice

This rice pairs beautifully with many dishes, especially meals with Mediterranean or fresh flavors.

    Try serving it with:

    • Haitian chicken stew
    • Grilled salmon
    • Lemon garlic shrimp
    • Pan-seared lamb chops
    • Roasted vegetables
    • Crispy tofu or chickpeas

It also works beautifully with simple yogurt sauces, cucumber tomato salads, or fresh tomato salads.

Easy Ways to Customize This Recipe

One of my favorite things about cooking is making a recipe your own.

Here are a few easy ways to change this dish depending on what you have on hand.

Add toasted almonds or pine nuts for extra texture.

Use fresh dill instead of dried dill for an even brighter flavor.

Turn it into a full meal by mixing in shredded chicken or grilled shrimp.

It’s a flexible recipe that adapts easily to what you enjoy most.

    Helpful Tips

    • Rinse rice well for the best texture.
    • Fresh lemon juice gives the brightest flavor.
    • Let the rice rest before fluffing.
    • Add cranberries if you like a sweet-tart contrast.

Can I use jasmine rice instead of basmati?

Yes. Both basmati and jasmine rice work well in this recipe.

    Can I use fresh dill?

Absolutely. Use about ¾ cup chopped fresh dill in place of dried dill.

Can I make this ahead of time?

Yes. Store it in the refrigerator for up to 4 days and reheat gently.

Can I freeze lemon dill rice?

Yes. Let the rice cool completely and freeze for up to 2 months.

    Equipment

    • Saucepan

    Ingredients

    • 2 cups Basmati Rice; Or Jasmine Rice. Rinsed until water runs clear.
    • ⅓ cup dried dill
    • 4 garlic cloves; minced
    • ⅓ cup olive oil
    • 1 ½ teaspoon salt; Or to taste
    • ½ teaspoon ground pepper; or to taste
    • Juice from 1 lemon
    • 1 tbsp. chopped fresh cilantro
    • ⅓ cup dried cranberries optional
    • 3 ½ cups water

    Instructions

    • Rinse the rice under cold water several times until the water runs clear. This helps remove excess starch and keeps the rice fluffy.
In a large pot over medium heat, add the olive oil and minced garlic. Cook for about 30–60 seconds until the garlic becomes fragrant, being careful not to burn it.
Add the dried dill, salt, and black pepper. Stir gently to combine. Add the rinsed rice to the pot and stir for about a minute so the grains lightly toast in the oil.

    • Pour in the water. Add the chopped cilantro, and dried cranberries if using. Taste the liquid and adjust seasoning if needed before serving.
Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for about 15–18 minutes, or until the liquid is absorbed.
Remove the pot from heat and let the rice sit covered for about 5 minutes.
Fluff the rice with a fork, then stir in the lemon juice. Serve warm and enjoy.
