These quail eggs are considered a delicacy in many parts of the world, to include North America, Asia, and Europe. These eggs are as nourishing as regular eggs. They are equally delicious and helps dinner or brunch comes together easily.
To start off, this dish originated in Pampanga. As appose to my Haitian recipes, which are often heavy in sauces and bold flavors, this Sipo Egg recipe is equally infused with bold flavors and is made in a buttery creamy sauce.
Traditionally this Filipino recipe include shrimp, quail eggs, vegetables, and sometimes ham. Since we do not eat pork, this dish is made simply with a mixture of seafood.

Ingredient you’ll need
- 1 tablespoon Mazola Corn Oil
- 1 lb. mixed seafood; thawed: shrimp, squid, mussels, and surimi
- 18 pieces quail eggs boiled and peeled
- 3 tbsp diced mirepoix mix
- 1 teaspoon garlic paste
- 1 1/2 cup mixed vegetables
- 1/2 cup water
- 1 can cream of mushroom 10 oz.
- 1/2 cup half and half cream
- Salt and pepper to taste
How to make Sipo Eggs
Start by heating the oil in a large skillet or saucepan. Then add the seafood blend and cook for 5 minutes or until the seafood mixture starts to brown. This should take about 5 minutes.
Then add mirepoix and garlic. Stir. Cook for 1 minute or until fragrant. Then add the mixed vegetables. Stir. Cook for about 3 minutes.
Next, add the water and cook for 1 minute. Then add the cream of mushroom and half and half cream, salt
Mix well to combine. Then add the eggs and stir. Cook for an additional 2 minutes.
Serve warm and enjoy with bread!

Tips for making this recipe
- Can I add traditional eggs to make this dish
? Yes , you can use any eggs you like. However, other eggs may not bebite size as the quail eggs. - Do I need to thaw the seafood prior to cooking it
? I recommend thawing out the seafood mix to release any water as the mixture will create liquid while cooking it. This will make it difficult to “sear” the seafood. - Do I need to use seafood? Traditionally this dish is made with shrimp. However, make the recipe yours and add any seafood/meat you’d like.
