My simple air fryer roasted acorn squash
Now that fall is in full motion, it’s time for all those comforting must have butternut squash soup and tomato soup. If you are anything like me, you must have batches in the freezer and ready to be reheated and enjoy.
Fall recipes are by far my favorite recipes to make. I enjoy the warm flavors, the spices, and being able to roast vegetables for various dishes, such as this roasted acorn squash slices. However, my love for fall recipes goes far beyond the warm spices.
If you’ve never roasted acorn squash in air fryer before, you have to try it as it is delightful!
Why Does This Roasted Acorn Squash Slices Recipe Work?
If there were metals for the pickiest eaters, I think my kids will win all. They dislike anything that’s not pasta, that does not include fried wings, or that’s not submerged with cheese, like this chili mac and cheese.

Today, I’m sharing my go-to air fryer acorn squash slice recipe. It’s super easy – it requires 4 ingredients (squash, kosher salt, honey, and unsalted butter), and about 10 minutes of your time to prep. Then, an additional 15 minutes in the air fryer for them to roast to perfection.
In the end, the roasted acorn squash is good enough to enjoy on its own or as a side dish.
How to Roast Acorn Squash in Air Fryer?
You’ll need a sprinkle of salt (about ¼ tsp. or a pinch), a good knife because squashes, in general, are hard to cut through. You will also need your trusted Air Fryer and 15 minutes of your time to let them cook.
Here are my step-by-step recipe and guide to help you cook perfect acorn squash every time.
How to Cut an Acorn Squash in Half
Acorn squashes are tough, but they are not as tough as spaghetti squash. However, a good knife such as a chef’s knife is needed.
I recommend before cutting the squash, rinse and dry the squash. No need to peel the squash as it is tough. Next, take the knife and cut the squash in half. It’s easier to cut from one side to the other.
I find that once the squash is cut in half, pulling the squash apart with your hands makes it so much easier to finish the process.
Cooking Air Fryer Acorn Squash
Once you have the two halves, cooking the air fryer acorn squash is very simple. You’ll want to cut out the stem. Remove the seeds with a spoon by scooping it out. You can save the seeds later to roast and use it as a topping for soups and salads, or as a snack. Or, you may also discard the seeds if you choose to. See picture 1.
Next, cut the squash into your desired size or into slices to make the air fryer roasted acorn squash slices. See picture 2.
Then add all the squash pieces to a bowl. Pour in the melted butter, honey, and salt and mix well. See Picture 3 and 4.
Transfer the squash to the air fryer basket but reserve the remaining mixture in case you choose to base the squash as it cooks.
Finally, it’s time to roast! Spread the acorn squash in the basket. You may use an air fryer lined paper or line the basket with parchment paper or leave it as is. Make sure to leave a little space between each piece of acorn – this way, the squash will get nicely crisp and brown in the air fryer.
Cook on 400-degrees for 15 minutes or until the squash is tender and golden brown. Feel free to base again with the remaining honey butter mixture (optional) and roast for an additional 5 minutes or until desired doneness. Remove from the basket and

- A good chef’s knife is a must to cut the squash as it is tough.
- Is the skin on an acorn squash edible? Yes, you can eat the skin on the acorn squash and almost any squash. Sheela Prakash from Epicurious has a great article about the squash skins. It goes into great detail regarding how to cook the squash and eat the skin.
- You may use an air fryer lined paper, line the basket with parchment paper, or leave it as is. I prefer to not line the basket to give the melted butter space to drain. Otherwise, you’ll end up with soggy acorn slices. Make sure to leave a little space between each piece of acorn – this way, the squash will get nicely crisp and brown in the air fryer.
- Roasted Acorn Squash can last in the refrigerator in an airtight container for up to 5 days.
- Do not discard the seeds, use them to roast and enjoy as a snack.
- Instead of using honey, maple syrup is also good to roast acorn squash.
- To make prep easier, try to buy the pre-cut squash if you can find it.

Air Fryer Roasted Acorn Squash
Ingredients
- 1 acorn squash
- 1 stick unsalted melted butter sweeten
- 4 tbsp. honey maple syrup will work as well
- ¼ tsp. kosher salt
Instructions
- Rinse, dry, and cut acorn in half. See my method in the post to easily cut the acorn squash.
- Remove the seeds. Cut the squash into desired pieces or slices. Place the pieces in a bowl.
- Pour the melted butter over the squash, then add the honey, and salt. Mix well to combine. Then place the squash pieces into the air fryer basket, reserving the honey butter mixture for later use if desired.
- Roast on 400 degrees for 15 minutes. Base with the remaining honey butter mixture if necessary in between cooking. Serve warm and enjoy.

This recipe is the BOMB. Blackened squash? Oh heck no that is the honey that gets a great char. I added slices to let the honey/butter/salt get in the cracks. Use the leftover honey mix as a dipping sauce. Oh also I just put foil in the bottom of my air fryer.
