    As a Haitian woman who grew up surrounded by bold flavors, slow-simmered stews, and meals that brought everyone to the table, I couldn’t help but appreciate the beauty of this classic Filipino recipe. 

    It’s simple, deeply flavorful, and reminds me that great comfort food doesn’t need dozens of ingredients to leave a lasting impression.

    What is Filipino Chicken Adobo?

    Chicken Adobo is a classic Filipino dish made by simmering chicken in a savory mixture of soy sauce, garlic, vinegar (in traditional versions), bay leaves, and seasonings until the meat becomes tender and flavorful.

    A Quick Note About This Recipe

    Traditional Filipino Chicken Adobo is typically made with soy sauce, vinegar, garlic, bay leaves, and black peppercorns. This version is inspired by those comforting flavors but reflects how I prepared it in my own kitchen. 

    One of the things I love most about home cooking is seeing how recipes evolve from one family—and one kitchen—to another. My hope is simply to celebrate a dish that has brought comfort to generations of Filipino families.

    It’s Philippines’ National Dish

    Chicken adobo is often considered one of the national dishes of the Philippines, and for good reason. The combination of soy sauce, garlic, bay leaves, and ginger creates a rich, savory sauce that slowly transforms as it cooks.

    The chicken becomes incredibly tender while the sauce reduces into something you’ll want to spoon generously over a bowl of warm white rice.

    Why Is Chicken Adobo So Popular?

    Its rich flavor, simple ingredients, and ability to taste even better the next day have made it one of the Philippines’ most beloved comfort foods.

    Can I Use Chicken Thighs?

    Absolutely, you can use any part of the chicken you’d like. Bone-in chicken thighs and drumsticks are excellent choices because they stay juicy during the long simmer.

    Do Not Skip The Marinating Process

    One of my favorite parts of making this recipe is allowing the chicken to marinate before it ever touches the pan.

    Giving the chicken time to soak up the soy sauce, garlic, ginger, and seasonings helps develop layers of flavor that only become richer as everything slowly simmers together.

    Don’t Jump Into Cooking – Brown the Chicken First

    I also recommend browning the chicken before simmering. While it takes a few extra minutes, those beautifully caramelized pieces add another level of flavor to the finished dish.

    Once everything is combined in the pot, the hardest part becomes waiting while your kitchen fills with one of the most comforting aromas imaginable.

    The sauce gradually darkens as it cooks, becoming glossy and concentrated without losing enough liquid to spoon over freshly cooked rice. I finished mine with sliced green onions, adding some during cooking and sprinkling the rest over the finished dish for a fresh pop of color and flavor.

    Although every Filipino family has their own treasured version of chicken adobo, this recipe is my heartfelt tribute after spending time learning about one of the Philippines’ most beloved comfort foods.

    Food has always been one of my favorite ways to appreciate different cultures, and this recipe reminded me how much we all have in common around the dinner table.

    Key Ingredient Notes To Keep In Mind

    Soy Sauce – I used seasoning soy sauce, but low-sodium soy sauce works just as well. If using low sodium, you may not need the additional water.

    Ginger – Ground ginger adds warmth, but fresh ginger can also be used if that’s what you have available.

    Chicken – Bone-in chicken pieces develop the richest flavor during simmering. I used half of a whole chicken as it is cost effective. 

    Tips for Success

    Marinate the chicken for at least one hour, but overnight develops even deeper flavor.

    Brown the chicken in batches instead of overcrowding the pan.

    Use low-sodium soy sauce if you prefer a less salty dish.

    Allow the sauce to reduce naturally for the richest flavor.

    Don’t discard the sauce—it’s the best part of the meal.

    Can I Make Chicken Adobo Ahead?

    Yes. In fact, many people feel it tastes even better the next day after the flavors have had time to develop.

    Storage Instructions

    Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors continue to develop overnight, making leftovers even better the next day.

    Freezing

    Freeze completely cooled chicken adobo in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.

    Reheating

    Warm gently on the stovetop over medium-low heat, adding a splash of water if needed to loosen the sauce. You can also microwave individual portions until heated through.

    How to Make Filipino Chicken Adobo?

    One of the greatest joys of cooking is discovering recipes that tell someone else’s story while creating new memories in your own kitchen.

    Although I grew up enjoying Haitian comfort food, preparing this Filipino Chicken Adobo reminded me that love, family, and good food have a way of bringing us together no matter where we call home.

    If you’re looking for a comforting meal that’s packed with flavor yet simple enough for any night of the week, this Filipino Chicken Adobo deserves a place on your dinner table.

    Equipment

    • Large braiser or heavy-bottomed saucepan

    Ingredients
      

    • ½ whole chicken; cut into serving pieces
    • 3 green onions; scallions, sliced (white and green parts separated)
    • 4 garlic cloves; chopped
    • ¼ cup neutral oil
    • 1 cup seasoning soy sauce or low-sodium soy sauce
    • 1 cup water only if needed to dilute seasoning soy sauce
    • 1 tablespoon ground ginger
    • 1 tablespoon red pepper flakes; optional
    • 2 bay leaves

    Instructions
     

    • In a bowl, combine the soy sauce, water (if using, if not – substitute it with soy sauce. See notes below), garlic, ground ginger, sliced white portions of the green onions and half of the amount of the green portions of the green onions/scallions (reserve the other half for garnish), and red pepper flakes (if using).
      Pour the mixture over the chicken and marinate for at least 1 hour or overnight for the best flavor.
      Heat the oil in a large braiser or heavy-bottomed saucepan over medium-high heat.
      Remove the chicken from the marinade, reserving the marinade. Brown the chicken in batches for 8–10 minutes, turning occasionally until lightly browned on all sides.
      Return all of the browned chicken to the pan. Pour the reserved marinade over the chicken. Add the bay leaves. Cover and simmer for 10–15 minutes.

    • Remove the lid, stir, reduce the heat to medium and continue simmering uncovered for about 30 minutes, or until the chicken is tender and the sauce has darkened and reduced slightly while still leaving enough sauce for serving.
       Taste and adjust if needed. Serve hot over steamed white rice. Garnish with the green portions of the scallions before serving.

    Notes

    Browning – Browning the chicken first creates deeper flavor, while marinating it beforehand allows the soy sauce, garlic, and ginger to penetrate the meat. As the sauce simmers and reduces, it becomes rich enough to coat every bite while still leaving plenty to drizzle over steamed rice.
    Soy Sauce – I used seasoning soy sauce, but low-sodium soy sauce works just as well. If using low sodium, you may not need the additional water.
    Ginger – Ground ginger adds warmth, but fresh ginger can also be used if that’s what you have available.
    Chicken – Bone-in chicken pieces develop the richest flavor during simmering. I used half of a whole chicken as it is cost effective.
    Savory Thoughts Tip: Don’t rush the final simmer. As the sauce slowly reduces, it becomes darker, richer, and more concentrated. That’s when the magic happens.
