Ti –Malice Background
Ti-Malice is common in Haiti. It brings out the flavor in meat and fish dishes; it also compliments vegetables. This sauce not only pairs well with meat, it also has an interesting story.

The story with the Sauce Ti Malice includes two best friends- Ti-Malice and Bouki. Well, legend has it, Bouki is always after Ti-Malice’s food. Bouki would often go to Ti-Malice house at the “right” time – for lunch or dinner time.
One day as Boukie arrives at Ti-Malice’s house, Ti-Malice prepared a special sauce and poured it over the food. Well, instead of Boukie detesting the food, HE LOVED IT! Bouki was SO delighted his friend prepared this SPECIAL sauce just for him so he could enjoy the meal.
He screamed and shouted with joy! He circled around the neighborhood and surrounding area telling everyone he could find about this special sauce his friend made just for him.
Since then, the name of the sauce has been Ti-Malice and still is to this day.
My Ti-Malice Ingredients
While the sauce taste great, I encourage you to use extreme caution when preparing the sauce. Gloves are highly recommended as the peppers are extremely hot, and if you rub your eyes it may burn. So, the ingredients you’ll need are as follow:
- Hot peppers –Scotch Bonnet
peppersare used. However, if you are unable to find it, habanero peppers will work as well. - Large onion – Where there’s
spice ,there’s onions. - Shallots – Often
use in this recipe. - Garlic cloves – Garlic works well with peppers and onions.
- Lime juice and Apple Cider Vinegar – provides acidity
- Oil – We will need this to cook the onions.
- Tomato paste – Help to provide the red color. Some families do not use tomato paste when making this sauce. Therefore, it is optional.
- Water – Help to dilute the sauce.
- Salt and pepper to taste – great for seasoning.
How to make Haitian Creole Hot Sauce
This popular condiment is special in many homes. Haitians take pride in making this sauce as it originated in Haiti. This is not the typical sauce that usually including simply blending the ingredients without cooking it first.
To make this sauce. You’ll need to chop the ingredients. Marinate the onions and shallots in
Using a small saucepan, heat the oil and transfer the marinated onions and shallots to the pan (with the liquid). Bring to a boil over medium low heat. This process should take about 5 -7 minutes.
Add the peppers, garlic, tomato paste, water, salt and pepper. Stir. Lower the heat to low. Simmer for an additional 15 minutes.
Let cool. You can leave the sauce as is and transfer it to an air tight container. Or, you can use my preferred method, which is to blend it.
If blending, allow the sauce to cool, then transfer to a high-quality blender such as this one or this one, or a food processor such as this one. Blend or process until smooth. Transfer to your desired bottles or airtight container like this one and refrigerate.
How long can Ti-Malice sauce last?
Like our Pikliz (Haitian spicy coleslaw), Sos Ti-Malice can last a few months as well. Remember, acid is included in the sauce which help to preserve the sauce.

Ti-Malice Sauce Serving Suggestions
- Chicken or poultry is always great with this sauce. Especially when prepared in stew form.
- Haitian tasso – The sauce will bring out the flavor of any red meat, like my slow cooker chuck roast recipe.
- Poulet En Sauce– This chicken stew is perfect for this hot sauce as it can be incorporated when preparing the chicken.
Top tips for Sauce Ti-Malice
- Best to wear gloves when chopping the ingredients as the peppers are extremely hot and spicy.
- Create Depth of flavor by adjusting the salt and pepper level.
- Make a large batch by doubling the ingredients. This is a perfect gift for friends during the holidays or special occasions.

Ti Malice – Homemade Haitian Hot Sauce
Ingredients
- 6 Habanero Peppers Chopped; Scotch bonnet peppers are fine as well.
- 1 Large onion Chopped
- 2 Shallots Chopped
- 3 Garlic cloves Chopped
- Juice from 1 lime
- ⅓ Cup Oil Olive oil or vegetable oil
- 2 Tbsp. Tomato paste
- 1 Cup Water
- Salt and pepper to taste Or ½ teaspoon black pepper and 1 tsp. kosher salt
- 1 Cup Apple cider vinegar
Instructions
- Marinate onions and shallots in vinegar and lime juice for 1-2 hours in a saucepan.
- Bring to a boil over medium low heat. This process should take about 5 -7 minutes.
- Add the peppers, garlic, tomato paste, water, oil, salt and pepper. Stir. Lower the heat to low. Simmer for an additional 15 minutes.
- Let cool. You can leave the sauce as is and transfer it to an airtight container or use the preferred method of blending the ingredients.
- When blending, allow the sauce to cool, then transfer to a high-quality blender. Blend until smooth.
- Transfer to your desired bottles or airtight container and refrigerate.
