What do you do when you’re home with three little tiny humans and snowed in? If you’re anything like me, you will cook and bake all day. On the first day of spring, we were greeted close to 2 feet of snow. SNOW. On the first day of SPRING. As happy as I was to see the ground covered in white, I was not looking forward to cleaning it up. The kiddos came from all directions asking for food, drinks, and activities for the day.
Needless to say, they were pretty darn happy they did not have to go to school. So, I took advantage of the moment and wrote down multiple recipes to help us make it through the day.
Our day started with Chicken Frittata for breakfast. Soon after, the kiddos lounged while I prepared lunch. And honey, lunch was my quick and easy succulent, juicy 4 Ingredient Chutney BBQ Chicken with steamed cabbage and mixed bell peppers.
I’m talking about Sweet Baby Rays BBQ sauce. Juicy chicken drumsticks. Chutney with BBQ sauce. Sweet and savory all in one in one easy electric skillet recipe.
Chicken legs drumsticks cooked to perfection with a hint of salt and pepper to taste, then garnished with parsley flakes.
To be honest, when I put the drumsticks out the freezer, I had no idea what I was going to cook. Luckily, I still had a jar of chutney sauce in the pantry to create this chutney BBQ sauce to cover these delicious chicken legs.
Chutney Breakdown / What is chutney sauce?
If you are not familiar with chutney, or chutney sauce, here’s a full disclosure. It’s a condiment made of fruits or vegetables with a hint of acidity, sugar, and spices. Chutney “is a sauce or a dry base for a sauce in the cuisines of the Indian subcontinent that can include such forms as tomato relish, a ground peanut garnish or a yogurt, cucumber and mint dip”. You can get a jar of chutney sauce from your local grocery store.
The most widely use chutney sauce is the mango chutney sauce. It is the best to use when cooking shrimp, or seafood dishes. It adds a hint of sweet flavor combined with a variety of spicy ingredients and curry seasoning.
About this 4 Ingredient Chutney BBQ Chicken
If you have been following Savory Thoughts for a while, you know how much I love 30 minutes-or-less meals. This 4 Ingredient Chutney BBQ Chicken took just a little over 30 minutes to make. Why? Well, I used my electric skillet.
Second, I was baking a carrot cake and fudge brownies.
Third, I did not want to mess with the temperature while baking. Instead, this is where my trusted electric skillet came in handy. Not to mention, it works a lot faster than my oven in my option- ha!
Chutney BBQ Sauce
To make this succulent, mouthwatering, delicious, tender, delightful, tasty, and may I also add, supper addictive BBQ sauce all you need is one cup of Sweet Baby Rays BBQ Sauce (which by the way I am a SUPER fan of) and the jar of chutney sauce.
Combine the two ingredients together, and voila, you have BBQ chutney sauce. That’s how I prepared the chutney sauce for the kiddos and myself.
How and why you should prepare the 4 Ingredient Chutney BBQ Chicken
I absolutely love this chutney BBQ chicken mainly because of how simple it is to make. It goes well with any side dish. It is finger licking food!
The process is easy. Prep time takes about 10 minutes.
- A couple minutes to prepare the BBQ chutney sauce (set aside when done),
- and a few more minutes to wash the chicken.
By the way, I always wash my chicken or any meat with distilled white vinegar. I am from Haiti, and Haiti is HOT. Which means most foods are prone to bacteria while seating in the hot sun on the street market. We always defer to white vinegar and lemon/lime. Though I have been in the states for years, I’ve kept the same cleaning method as it applies to cleaning meat.
Once the 8 chicken legs are thoroughly washed, paper dry the chicken legs drumsticks, lightly season with salt and pepper. Allow it to cook for 25 minutes. Add the chutney BBQ sauce during the last 10 minutes to enjoy your delicious BBQ chutney chicken.
Deliciousness created in a little over 30 minutes with just 4 ingredients. This is one recipe that’s going down in the books for another quick and easy electric skillet recipe!
Perfectly pair 4 Ingredient Chutney BBQ Chicken
Pair the Chutney BBQ Chicken with mash potatoes, fresh green leafy salads, steamed veggies, and even baked beans! Regardless, the crowd or your family will want more.

- 8 pieces Chicken legs
- 1 Crosse & Blackwell Major Grey's Chutney, 9 oz
- 1 cup Sweet Baby Rays BBQ Sauce
- Salt and pepper to taste
In a medium bowl combine the Chutney sauce and the BBQ sauce. Set aside.
Thoroughly wash the chicken then lightly season with salt and pepper. Cook for 30 minutes in an electric skillet on 350 degrees. Pour the BBQ mixture over the chicken then cook again for 10 minutes.
Serve warm with any side of your choice.
Tips and Notes / Most Noteworthy:
The chicken drumsticks may also be cooked in the oven at 350 degrees for 30 minutes.

Hello Friends! I’ve shared with you some of my favorite comfort foods. But today, I am sharing with you my husband’s Ultimate Chicken Pot Pie recipe.
Though it is his favorite, I do not make this very often (another dish I do not make often, right?). A few days ago I shared with you my to-go-to Mixed Vegetables Mushroom Soup anytime hubby ask for a quick and easy meal, which by the way is done in 15 minutes. I enjoy cooking and sharing simple dishes that are very tasty and filling, and that does not require tons of hours in the kitchen. My husband and I have our own favorite dishes that comes to mind when we think of comfort food. He on the other hand, ever since we met has always expressed his love for Chicken Pot Pies.
I took rather a short route to make this delicious dish. The ending result was just as satisfying. The combination of the spices and herbs are simply divine!
Depending on where you are from around the world, chicken pot pies can be served for special occasions, or simply a weeknight meal.
As stated above, hubby is a huge fan of Chicken Pot Pies. Unfortunately, I do not make enough of it.
After you are done with all of the prepping and cooking, the pot pie will be filling and most of all, this pot pie will make you feel warm inside.

Don’t focus on your disappointment
Ultimate Chicken Pot Pie
- 2 large cooked boneless chicken breasts, without the skin and shredded. You only need 1 and 1/4 cup of shredded chicken.
- 2 tbsp. butter
- 1 yellow onion chopped
- 2 celery stalks diced
- 14.5 oz. chicken broth
- 2 tbsp. cornstarch thinned with 2 tbsp. water
- 1 cup frozen vegetables
- 2 tbsp. heavy cream
- 1 tsp. salt and pepper
- ¼ cup fresh parsley chopped
- 4 squares puffed pastry
- 1 egg plus 1 tsp. water for coating
- 2 cloves garlic minced
- ½ cup cooking wine optional
Preheat oven to 400 degrees. Pat dry and roast chicken for 25-30 minutes until cooked through. No need to add salt and pepper.
In a separate bowl, thin the cornstarch with the water. Set aside.
In large saucepan melt butter, add onion, and celery and frozen vegetables. Cook for 5 minutes. Stir to cook evenly. Add cooking wine and cook for 1 min over medium heat. Add chicken broth and cornstarch mixture bring to a boil and cook 1 min. reduce heat to low.
Meanwhile prep chicken. Shred the chicken with two forks. Add to the soup mixture, along with heavy cream, salt and pepper, and parsley. When the mixture starts to boil, add parsley and salt and pepper. And the chicken too. Cover and allow simmering on low heat.
Prepare egg wash. Whisk the egg and water together. Set aside.
Ladle mixture into oven safe bowls and top with puff pastry, securing the sides to the bowl. Brush the puff pastry with the egg wash.
Bake according to directions on your package of puffed pastry until pastry is golden brown and puffed up. Serve warm.
- It is best to roast the chicken ahead of time. This can be done hours before.

Butternut Squash Soup – There’s nothing more comforting than soup. Soup of any kind. Nothing can compare to a warm, comforting, delicious, bowl of soup that just makes you want to cuddle in a blanket on the sofa/couch to watch a good movie.
There are only two soups I often opt-in for when the busy day calls for something quick, easy and delicious; and that’s Tomato Soup Butternut Squash Soup. Today, I am sharing my extremely easy Healthy Butternut Squash Soup that will help ease you into the mood to embrace any weather.
Why Butternut Squash?
Besides the fact that it is out of this world delicious? It is sweet, with a “nutty taste similar to that of a pumpkin.” But what I love about butternut squash the most is that it turns a deep orange color when ripe. It then becomes sweeter and richer. Furthermore, it is very inexpensive. One could pay cents a pound at your local grocery store.

Butternut Squash is cooked and or prepared in many ways. You can roast it, grill it, and even stir fry it. The possibilities are endless. It is also a highly nutritious vegetable.
Key ingredients I used to make this delicious Butternut Squash Soup
I went to WalMart and bought my squash from there. We often have a great selection to choose from. In addition, I also picked up the Land O’Lakes Heavy Whipping Cream from there as well. A few aisles over, I picked up the Swanson Natural Goodness Chicken Broth.
In our home, we actually eat various soups throughout the year, even on those hot summer days.
I made it a point to have more soup in the colder days and long nights a couple years ago, versus the bright sunny days in the summer.
Butternut Squash is something we always have in our kitchen, so why not make soup with it? The great thing about this squash is that you can buy it any time of the year.
There are of course various ways to make this soup. However, with just a few ingredients you will be on your way to a happy place of indulgence in no time!
This version of butternut squash soup has a bit of “kick” with a hint of sweetness. Though it is very thick and creamy, it is very easy to make.
This soup is as healthy as it is delicious.

Healthy Butternut Squash Soup Recipe
- 2 lbs. butternut squash
- 1/2 tsp. onion powder
- 1 cup chicken broth
- 1/3 cup heavy cream
- Salt and pepper to taste
- 1 cup water
- 1/4 tsp. cumin
- 1 tbsp. cooking wine
Make Healthy Butternut Squash Soup Recipe
Wash and cook the butternut squash.
Remove the skin. Transfer the cooked squash to the blender. Add water and chicken broth.
Transfer to saucepan. Add the remaining ingredients and season with salt and pepper. Cook on low heat for 15 minutes. Serve warm and enjoy.
- It is best to cook the squash ahead of time for easy peeling and blending.
- You may add a little more water if the soup becomes too thick.
- For this recipe, I used kosher salt.
