    Chocolate Zucchini Waffle

    Happy Monday, Friends! We are one week shy of Christmas. In the mix of menu planning, I came across this recipe I wrote during Thanksgiving with my oldest baby. For our Christmas breakfast, this Chocolate Zucchini Waffle recipe, of course, made the list again.

    Zucchini Waffle

    Chocolate Zucchini Waffle

    Ingredients
      

    • 1 ½ cup all-purpose flour
    • 2 eggs room temperature
    • ¼ tsp. salt
    • 1 cup grated zucchini and 1 tbsp. grated zucchini
    • ½ cups cocoa powder
    • ½ tsp. nutmeg
    • 1 cup almond milk
    • ½ tsp. baking powder

    Instructions
     

    • Lightly beat the eggs and milk in a separate bowl. Set aside.
    • Peel and grate the zucchini. Place the grated zucchini in a clean dish towel, squeeze out the juice.
    • In a medium-size bowl, mix the dry ingredients. Then add the zucchini to the dry ingredients.
    • Add the milk and eggs mix to the zucchini bowl. Well combine.
    • Using your measuring cup, pour 1 cup of the waffle mix into the waffle maker. Cook for 4-5 minutes. Repeat the steps until you have used all of the mixes. Makes about 3 large waffles. Enjoy with butter, Maple Syrup, and with fruits of your choice.

        Wow, I have to try this. Sneaking in a vegetable in something sweet that kids will eat quickly. If I was to leave it up to my granddaughter, she would only eat corn. It’s a struggle and fight to get her to eat any veggie. I will give this a try and let you know how it went.

      I have eaten zucchini sweet bread but never have had waffles like this. They look amazing, a great way to add veggies to the meals. The chocolate must be a nice touch too. Now I need breakfast =)

        Hahaha! That’s funny. My 7-year-old son who thinks he’s a chef came up with this idea during Thanksgiving. At first, I thought the same thing too and wondering how in the world would this taste. Because I did not want to hurt his feelings by saying “no thanks”, I just decided to go with it.
