Ghanaian Peanut Butter Soup, commonly called Groundnut Soup in Ghana, is a traditional soup made with peanut butter (groundnuts), meat or poultry, tomatoes, onions, peppers, and warm spices.
The peanut butter dissolves into the broth. But I like to blend it first as this is how I was taught by my Ghanaian friend. Blending the peanut butter with the other ingredients create a rich texture while adding a distinctive nutty flavor.
Depending on the region and family tradition, the soup may be made with chicken, goat meat, beef, smoked fish, turkey, or a combination of proteins.
One of the things I love most about this soup is how versatile it is. It can be enjoyed during a family gathering, a special celebration, or simply as a comforting meal after a long day.

Key Ingredients Used To Make This Soup
If you’ve made our Ghanaian Light soup, the base of the Peanut Butter soup is the same. That’s one of the methods I like about making Ghanaian food. Most of their soups share the base.
Peanut Butter: The star ingredient. I recommend using a natural peanut butter with minimal ingredients—preferably unsalted. Avoid sweetened peanut butter whenever possible, as it can alter the savory balance of the soup. However, for this soup I did use sweetened peanut butter because that’s what I had on hand; but because I made a large quantity, I was able to have better control of the salt level.
Chicken: Here’s where things get interesting. The chicken that’s used is not the average chicken found at the local “American” grocery store. You’ll need what is referred to as “medium hard chicken” – basically, Baked Hen. They are larger and take less time to cook then old hen, and they do not fall apart like traditional chicken.
Chicken is one of the most common proteins used in peanut butter soup and adds wonderful flavor to the broth.
Bone-in chicken is preferred and works especially well because it enriches the soup while it cooks.
Tomatoes: Fresh tomatoes help create a balanced flavor by adding acidity and brightness that complements the richness of the peanut butter.
Onion: Onions build the foundation of flavor and help create depth throughout the cooking process.
Ginger and Garlic: These aromatics bring warmth and complexity to the soup while enhancing the overall flavor profile.

One of the most common questions I hear is whether the soup tastes like peanut butter.
The answer is yes—but not in the way you might expect.
The peanut butter becomes savory as it cooks with the tomatoes, onions, garlic, ginger, and meat. Instead of tasting like a peanut butter sandwich, it develops a rich, earthy flavor that blends beautifully into the broth.

Your Soup Is Done When You See The Oil
One of the easiest ways to tell the soup is ready is when you notice a layer of oil rising to the surface.
Use Natural Peanut Butter (If & When possible)
Natural peanut butter provides the best flavor and texture.
Avoid varieties loaded with added sugar whenever possible.
Allow the Soup to Simmer (Highly Important)
The magic happens during the simmering process.
Giving the soup enough time allows the peanut butter, tomatoes, aromatics, and meat to work harmoniously together, creating the rich flavor this soup is known for.
Blend the Vegetables Well (Very Important – Even the Peanut Butter)
Blending the tomatoes, onions, ginger, garlic, and peppers helps create a smoother broth and allows the flavors to distribute evenly throughout the soup.
Skim Excess Oil if Needed & Stir Constantly
Natural peanut butter can release oils during cooking. If desired, simply skim off some of the oil from the surface before serving and while cooking. Stir the soup to avoid it sticking to the bottom.
Common Mistakes to Avoid
Using Sweetened Peanut Butter
Sweetened peanut butter can make the soup taste overly sweet and unbalanced; especially if this is the first time you are making this soup. Like I said, I used sweetened peanut butter – which I find that I like the taste, but if this is your first time making this soup, it can feel overwhelming.
Adding the Peanut Butter Too Quickly
Whisking the peanut butter with warm broth before adding it back to the pot helps prevent clumping.
Cooking on High Heat
High heat can cause the soup to scorch.
A gentle simmer is best.
Not Seasoning Enough
Because peanut butter is rich, the soup often needs adequate seasoning to bring balance to the final dish.

Ingredients
- 4-5 Heaping Spoon Peanut Butter; Use creamy textured peanut butter
- Baked Hen; Normally found at the international stores.
I purchased a 5½-pound baking hen, used one half for the soup, and saved the remaining half for another meal.
- 1 Star Anise
- 2 Bay Leaves
- Savory Thought's All Purpose Seasoning To Taste; Use your favorite all purpose seasoning if you do not have the Savory Thoughts Seasoning.
- Salt To Taste; Optional
- Water; 1 cup to blend with the ingredients, and the 4 cups for the soup. If you do not want to use water, you can substitute it for broth (vegetable, beef, or chicken)
- ½ cup Neutral Oil
To Marinate & Cook The Chicken
- 1 Medium Onion; Not Sweet
- 1 Habanero Pepper; Optional but highly recommended
- 6 Garlic Cloves
- 4 tbsp. Tomatoes Paste
- 2 Thumb Sizse Ginger; Peeled.
- 1 cup Water
Ingredients For The Soup
- 2 medium size onions; Cut in quarters. Do not use sweet onions. Use 2 medium onions or 1 large onion.
- 3 Large Tomatoes
- Habanero Pepper(s); Optional. To taste.
- 1 cup Peanut Butter; See tips in the post
- 1 Red Bell Pepper
Instructions
- Prepare and Marinate the ChickenAdd the onion, habanero pepper, garlic cloves, tomato paste, ginger, and 1 cup of water to a blender. Blend until smooth.Clean the baking hen properly then place the baking hen pieces in a large bowl. Pour the blended mixture over the chicken and season generously with the all-purpose seasoning and salt, if using.Mix well to ensure the chicken is evenly coated. Cover and marinate for at least 30 minutes. For even more flavor, marinate overnight in the refrigerator.Cook the ChickenTransfer the marinated chicken along with the marinade to a large stockpot or Dutch oven.Cover and cook over medium heat for 45 minutes or until cooked, stirring occasionally, until the chicken begins to release its natural juices. Check for doneness. It should be almost fork through. Pour in 4 cups of water (or broth) and continue cooking for an additional 20 to 30 minutes, or until the chicken is tender and fully cooked.
- Prepare the Peanut Butter Soup BaseAdd the star anise and bay leaves. While the chicken cooks, add the onions, tomatoes, red bell pepper, and additional habanero pepper(s), if using, to a blender.Blend until smooth. If needed, add a small amount of water to help the ingredients blend.In a separate bowl, combine the peanut butter with about 1 cup of the hot broth from the pot. Whisk until smooth and pourable. This helps prevent lumps from forming in the soup.
- Finish the SoupOnce the chicken is tender, carefully remove the star anise if desired.Add the blended vegetable mixture to the pot and stir well.Slowly pour in the peanut butter mixture while stirring continuously.Add the neutral oil and stir to combine.Bring the soup to a gentle boil, then reduce the heat and simmer uncovered for 25 to 35 minutes, stirring occasionally to prevent sticking.Taste and adjust the seasoning as needed with additional all-purpose seasoning or salt.
