    It can only be prepared within thirty minutes and can be cooked when you are having a busy day or want something nice for weekend lunch or weeknight dinner. 

    Topping it all, you can make it gluten-free or vegan-friendly, so you can enjoy it while being on a diet. 

    What is Mango Fried Rice?

    Mango fried rice is a popular Thai dish that combines sweet and savory flavors in a delicious and unique way. This is our version of Mango fried rice. We’ve included flavors we love from other recipes to create this fusion dish.

    The dish typically consists of stir-fried jasmine rice mixed with small pieces of ripe mango, diced vegetables such as onions and peppers, scrambled eggs, and a variety of seasonings such as fish sauce, soy sauce, and curry powder if you’d like. 

    Some variations of the dish may also include shrimp, chicken, or cashew nuts. The dish is usually prepared by first cooking the jasmine rice and allowing it to cool, we have the full recipe on how to make White rice here. As using freshly cooked and hot rice can result in a mushy texture, follow our guide to make it perfect each time. 

    The ingredients are then stir-fried in a wok or large frying pan until heated through and well combined.

    Along with using extra virgin olive oil, or you may opt for peanut oil, here’s what you’ll need to make this mango fried rice recipe.

    Ripe Mango Pieces: I would not recommend using frozen mango. It is best to use ripe fresh mango for enhanced flavor. You can also use canned mango as they are juicy and sweeter. 

    Chicken Breast: This is completely optional. You can substitute the chicken breast with mushrooms or tofu to keep this dish vegetarian or vegan. The meat is added in for extra protein.

    Sweet Peas And Bell Peppers: Filled with fiber and iron; making your dish even richer. 

    Turnip Leaves: To take this dish to the next level, we also added turnip leaves. They are high in protein and calcium. They are also filled with vitamins A and K. These greens will add some freshness to the dish. 

    Optional Ingredient – Eggs: Just scramble a couple of eggs to mix in with the rice. 

    How To Pair Your Mango Fried Rice

    This is a wholesome dish. Nothing else is needed to complete it as it is a flavorful and filling dish that can be served as a main course or as a side dish.

    How To Store Leftover Fried Rice

    Before storing mango fried rice, allow it to cool to room temperature. This will prevent condensation from forming in the container, which can make the rice mushy and spoil faster. 

    Then, store the mango fried rice in the refrigerator as soon as possible after cooking. Leftover rice should be refrigerated within two hours of cooking to prevent bacterial growth.

    Equipment

    • Wok

    Ingredients

    • ½ Cup Canola Oil; divided – or peanut oil
    • 2 Pieces Chicken Breast; cut into bite-size pieces
    • 1 Ripe Mango; cut into cubes
    • 6 Turnip Leaves or any Mediterranean Leaves; chopped
    • ¼ Cup Fresh Parsley; or about 7 sprigs, chopped
    • 1 Red Bell Pepper; Diced
    • 8 Cups Cooked White Rice
    • 2 Cups Frozen Sweet Peas; thawed (see notes below)
    • 2 Green Onions; sliced
    • ½ Cup Red Onions; diced
    • ¼ Cup Soy Sauce; see notes below
    • ½ Cup Cooking Wine; we used Goya cooking wine (dry white wine). See notes below.
    • Salt and pepper to taste

    Instructions

    • In a large wok, heat ¼ cup oil over medium-high heat. Cook the chicken until just cooked. No need to let the chicken turn brown. Best to cook the chicken in batches. Set the chicken aside on a plate.
      In the same wok, add ¼ cup oil then add the mango pieces, greens and parsley, and bell pepper.
      Next, lower the heat to medium. Add in the rice, sweet peas, green onions, red onions, and soy sauce.
      Mix well to combine, then add the cooking wine and season with salt and pepper to taste. Continue to mix well.
      ADDING SOY SAUCE TO MANGO FRIED RICE
    • Lower the heat to low, cover with a lid, and allow the ingredients to cook for about 5 minutes.
      Serve warm and enjoy.

    Cooking Wine: Instead of using dry white wine, you can substitute the wine with rice vinegar. 
    Soy Sauce: Instead of using soy sauce, to keep it vegan, consider adding Tamari instead. 
    Serving Options: Consider serving this fried rice with micro greens, scrambled fried rice or with edamame.

      Tastes great. In the ingredients, Cooking Wine is missing a unit of measurement. I was not sure if it was ½ cup or ½ tsp. I went the safe route and chose ½ tsp.
