    Easily adaptable to be made with white or red potatoes or creamy potatoes, while smoked sausage like the kielbasa sausage is used to only elevate the flavor. 

     

    However, you can also add chorizo, chicken sausage, and beef, and nope, you don’t need to brown the sausages before baking the casserole. This is a one pan dish.

    The best thing about this sausage casserole with potatoes recipe is that it has all the nutritional ingredients, ranging from veggies to meat, making it a hearty yet healthy meal. Even more, it creates a unique flavor with the combination of different ingredients and the most basic spices (black pepper, paprika, and seasoning). 

    This sausage green bean potato casserole is not a creamy recipe since it’s prepared with Russet Potatoes, which add a rich texture to the dish. In fact, the addition of fresh parsley, which is completely optional, only adds color and freshness to the dinner.

    Which Potatoes To Use? 

    For this recipe, we used Russet potatoes, however, any of the following potatoes or any of these potatoes will work: 

    Jewel Yam

    Japanese Sweet Potatoes

    Hannah Sweet Potatoes 

    Yukon Gold Potatoes

    Purple Majesty or 

    Red Gold Potatoes

    If you are looking for something less starchy, consider using Yellow Yams.

    Sausage green potato casserole has the healthiest ingredients and minimal oil, about 4 tablespoon of olive oil is added in this recipe, which makes it a fine choice for people who want the comfort food but don’t want to ruin their healthy eating habits. 

    To begin with, the potatoes and green beans provide the punch of fiber, which means it will be easy on the stomach without taking away the rich flavors. 

    In addition, since the recipe includes baking, you won’t have to use excessive oil, making another reason behind the healthy formulation. Not to forget, there are sausages in the casserole that deliver the proteins and help keep the blood healthy. 

    Ingredients Suggestions

    In addition to the oblivious ingredients, feel free to swap out the russet potatoes to sweet potatoes or any of the potatoes mentioned above. 

    Consider adding mushrooms instead of the sausage to give it a meaty texture (we recommend using portabella mushrooms. 

    Consider adding lemon juice to make the flavors pop and add to add some freshness. For a “creamy” texture, add in Dijon mustard which all also add some zing to the dish.  And for a crispy outer later, add top the dish with Parmesan cheese which will provide a subtle crunch to the dish. 

    Although you can use canned green beans, we highly recommend using fresh green beans. No need to blanch them first. The green beans are added at the second half of the cooking process.  The fresh green beans will come out nice al dente bite and vibrant green.

    Feel free to also add in red onions to provide a fresh sweet flavor, or you may use yellow onions. This worked well in our air fryer sausage and potatoes dish.

    How To Store Sausage Green Bean Potato Casserole?

    To begin with, sausage green bean potato casserole cannot be stored at room temperature, and you must refrigerate it. 

    Even more, you must use an airtight container to ensure the casserole retains the flavor and crispiness. To illustrate, it can be refrigerated for three to four days in the refrigerator and reheated in the oven!

    What To Pair With Sausage Green Bean Potato Casserole?

    Truth be told, this recipe is great on its own as it’s pretty enriching and flavorful. However, if you are making a huge dinner spread for family dinners or parties, it can be paired with turkey, Mac ‘n cheese, and cranberry sauce! 

    Best Green Bean And Potato Casserole Recipe Tips

    • Make it ahead of time! If you are meal prepping, you can make this sausage green beans potato casserole ahead of time. Feel free to make it up to a day in advance. When you’re ready to serve, reheat the meal casserole in the oven at 350 degrees until it’s heated through. 
    • We highly recommend cutting the potatoes and sausages to similar sizes. That way, this will help them cook faster and evenly. 
    • Best to use fresh green beans. Frozen or canned green beans will not give you an al dente texture and may cause your dish to be mushy or wet. 
    • Toss Occasionally. As the dish cooks, be sure to toss the potatoes and sausages occasionally so that way you do not end up with uncooked ingredients. 
    • It is best to use green beans that are dry. Again, use fresh green beans if possible. Others will release more liquid and may cause your meal to be filled with liquid.

    Ingredients
      

    • 1 Lb. Russet Potatoes Peeled and cut into cubes or 6 small to medium potatoes
    • 4 Tbsp. Olive Oil
    • 1 Tsp. Garlic Powder
    • 1 Tsp. Paprika
    • 1 Tsp. Kosher Salt Or to taste
    • ½ Tsp. Black Pepper Or to taste
    • 1 Pk Kielbasa Sausage; Sliced We used turkey Kielbasa sausage
    • 1 Lb. Fresh Green Beans

    Instructions
     

    • Preheat the oven to 400°F.
      Start by peeling the potatoes. Cut the potatoes in half then into cubes, quarters, or similar chunks. Place the potatoes in a bowl filled with water until you finish cutting the remaining potatoes.
      Slice the sausage and set it aside.
      Place the potatoes in a the baking dish. Add the olive oil, garlic powder, paprika, salt and pepper. Mix well to combine. Then add in the sausage. Mix well to combine.
      Step-by-step-guide
    • Place the dish on the center rack and bake the potatoes and sausage for 20 minutes at 400°F, stirring halfway through.
      Next add in the green beans. Mix well to combine. Return the dish in the oven and continue baking for an additional 25 to 30 minutes. Stirring halfway through so that all of the ingredients are fully cooked.
      Remove from oven and garnish with fresh herbs, if desired.
