Gather the ingredients: Prepare the shrimp. For this recipe, we used Jumbo size shrimp. Best to use shrimp that’s already deveined. Preheat the air fryer. Season the shrimp with salt and pepper to taste. In a separate small bowl, whisk the eggs. In two separate plates, add the coconut in one plate and the flour in another plate.
Dredge the shrimp one at a time through the flour, then the egg, and finally the coconut.
Set the shrimp aside on a plate and repeat with the remaining shrimp.
Spray the basket with olive oil, add the shrimp, then spray the shrimp with the olive oil. Air fry until golden brown and crispy.
Remove the shrimp and cook and serve with your desired sauce.
