Ingredients

  • 2 Cups Red Beans Rinsed
  • 8 Cups Water
  • ½ Cup Olive Oil
  • 2 Cups Millet (Pitimi) Washed and strained
  • 1 Cup Haitian Epis
  • 2 Tsp. Salt We used Kosher Salt
  • 5 Thyme Sprigs Fresh
  • 1 small Onion Chopped
  • 1 Habanero Or Scotch Bonnet Pepper Unbroken

Instructions

  • First, start by cooking the beans in the instant pot for 30 minutes. Quick release and strain the beans.
    Reserve 4 ½ cups of the liquid used to cook the beans. And set side.
    On the Instant Pot, click on sauté and adjust the time to 30 minutes. Add the beans, stir once and cook for 1 minute.

  • Add the Haitian Epis then add the Pitimi. Stir a couple times to mix well.

  • Next, add the liquid that was used to cook the beans, salt and pepper, hot pepper (unbroken), and thyme. Give it a quick stir.
    Cover, seal, and pressure cook on high for 10 minutes.
    When the timer goes off. Quick release and fluff with a fork. Serve and enjoy.
