Beef Noodle Soup

Authentic ramen soup is so much more complex than most people know, and wow, I love it! Thanks for sharing this recipe. It’s a good one!

Cut and chop the carrots, Bok Choy, carrots, garlic cloves, grate the ginger, green onions and small onion, parsley, and slice the meat. Set aside.

In a large saucepan, add 2 tbsp. oil. When heated through add the carrots and cook.

Next, add the Bok Choy, onions and green onions, and garlic. Stir well, cover and continue cooking. Lightly season with salt and pepper.

Remove the vegetables and place the vegetables on a plate or bowl and set aside. Next add the olive oil and the meat. Allow the meat to cook. Then add the sweet chili sauce, stir well and the vegetables.

Next add the broth and water, ginger and adjust seasoning with salt and pepper to taste. Add parsley then add the noodles.

Meanwhile, this is the perfect time to boil the eggs.

Cook until the noodles are soft; about 7 minutes. Serve well with boiled eggs if desired.

Top with parsley and sliced fresh green onions and sweet chili sauce. Enjoy!
