Lightly beat the eggs and milk in a separate bowl. Set aside.
Peel and grate the zucchini. Place the grated zucchini in a clean dish towel, squeeze out the juice.
In a medium-size bowl, mix the dry ingredients. Then add the zucchini to the dry ingredients.
Add the milk and eggs mix to the zucchini bowl. Well combine.
Using your measuring cup, pour 1 cup of the waffle mix into the waffle maker. Cook for 4-5 minutes. Repeat the steps until you have used all of the mixes. Makes about 3 large waffles. Enjoy with butter, Maple Syrup, and with fruits of your choice.
