Ingredients

  • 1 ½ cup all-purpose flour
  • 2 eggs room temperature
  • ¼ tsp. salt
  • 1 cup grated zucchini and 1 tbsp. grated zucchini
  • ½ cups cocoa powder
  • ½ tsp. nutmeg
  • 1 cup almond milk
  • ½ tsp. baking powder

Instructions

  • Lightly beat the eggs and milk in a separate bowl. Set aside.
  • Peel and grate the zucchini. Place the grated zucchini in a clean dish towel, squeeze out the juice.
  • In a medium-size bowl, mix the dry ingredients. Then add the zucchini to the dry ingredients.
  • Add the milk and eggs mix to the zucchini bowl. Well combine.
  • Using your measuring cup, pour 1 cup of the waffle mix into the waffle maker. Cook for 4-5 minutes. Repeat the steps until you have used all of the mixes. Makes about 3 large waffles. Enjoy with butter, Maple Syrup, and with fruits of your choice.
