Ingredients

  • 2 Tbsp. Olive Oil
  • Cup Deli meat Chopped or shredded
  • 2 Eggs
  • Salt and pepper to taste
  • 1 Tsp. Fresh parsley Chopped
  • ¼ Cup Onions Diced or chopped
  • 1 garlic clove; chopped

Optional Ingredients

  • ¼ Cup Chopped Tomatoes
  • Chopped Spinach
  • Avocado for layering

Instructions

  • In a bowl, whisk together the eggs, chopped onions, garlic, parsley, salt, and pepper, as well as optional ingredients.
    Heat olive oil in a skillet over medium - low heat.
    Pour the mixture into the hot skillet.
    Let it cook undisturbed for a few minutes. You want the bottom to set and develop a slight golden color. Carefully flip and cook until fully done.
