Wash and cut the potatoes into bite sice, or diced. Set aside. Dice the onions and set aside.

Add the potatoes to the heated oil skillet. Cook on medium-low heat for 10 minutes, covered. Stirring occasionally to avoid burning.

Remove the cover, add the onions, salt and pepper, thyme, stir and cook uncovered for an additional 10 minutes. Stirring occcasionally to avoid burning.
