  • 2 large beets peeled and quartered
  • 2 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • 1 teaspoon dried rosemary
  • ½ teaspoon ground black pepper

  • Preheat the oven to 350 degrees. In a large bowl, combine all of the ingredients.
  • Peel (optional) and cut the beets in quarters. Place the beets in an oven safe dish, drizzle with olive oil and apply generous pinches of salt and pepper. Then apply the rosemary.
  • Cover with aluminum foil, and roast until they’re fork-tender. Mine usually take 35-50 minutes – this will depend on the size of the beets.
  • Remove the foil then set the beets aside to cool.
  • Serve them with your favorite dish or protein and enjoy!

What does a roasted beet taste like?

Beets have an earthy flavor. However, in my opinion, they can be very sweet and absorbs any flavor you give them.

What do you do with beet stems:

I always toss away the stems as I have not used them to prepare other dishes. Plus growing up I always saw my mother throw away the stems. However, The Kitchn has some great tips on how you can have some better use for the stems instead of doing what I have been doing – throwing them away. Check out their blog post, Tip: Save the Beet Greens! Here.

What are the benefits of eating beets?

Now, if you are wondering if (roasted) beets are good for you? The answer again, YES! The number one reason is that beets lower the risk of heart disease. Alyssa Jung from the book 10,001 Timesaving Ideas wrote an excellent article, Health Benefits of Beets (and Risks) You Never Knew About, which explain how beets help fight cancer, boost endurance, and boost eye health, to name a few.
