Homemade Jamaican Beef Patties You’ll Want to Eat All Week

For the dough

  • 5 ½ cups all-purpose flour
  • 2 sticks cold butter; cut into cubes
  • 2 tsp. kosher salt
  • 2 tbsp. cane sugar
  • 2 tbsp. curry powder
  • 1 tbsp. turmeric powder
  • 1 ¼ cup water; more if needed

Filling:

  • 2 lbs. ground beef – 80% lean / 20% fat
  • ¼ cup diced onions
  • ¼ cup olive oil
  • 4 garlic cloves; minced
  • 1 tsp. minced ginger
  • Salt and pepper to taste
  • 4 tbsp. unsalted butter
  • 3 tsp. browning
  • 2 scotch bonnet pepper minced
  • 1 tsp. cane sugar
  • 1 ½ tsp. better than bouillon / or 1 bouillon cubes
  • 2 tbsp. homemade Jamaican jerk seasoning
  • 2 tbsp. chopped fresh parsley

Instructions

  • Make the dough: Combine flour, curry, turmeric, salt, sugar. Add cold butter and mix until crumbly. Slowly pour in cold water until dough forms. Wrap and chill for at least 30 minutes.

  • Cook the filling: In olive oil, sauté onions, garlic, and ginger. Add ground beef and cook until browned. Stir in browning, jerk seasoning, bouillon, sugar, Scotch bonnet, salt, pepper, and butter. Finish with parsley. Let cool.
    At this point, you can blend the meat mixture slightly with an immersion blender to get that signature 7-eleven texture. But this is optional. 
  • Take the dough out of the fridge. Cut the dough in half.
    Shape the patties: Roll dough, cut into circles, fill, fold, and crimp edges.

  • Shape the patties: After rolling out the dough, cutting it into circles, adding the filling, folding, and crimping the edges, brush with egg wash.

  • Bake: Bake at 375°F for 22-25 minutes or until golden.
