Equipment

  • Saucepan
  • Mixing Bowl

Ingredients

  • 3 eggs yolks
  • ½ cup fresh lemon juice about 3 lemons
  • Zest of 2–3 lemons
  • 1 cup granulated sugar
  • ½ cup unsalted butter or 1 stick of unsalted butter
  • 1 tsp. kosher salt

Instructions

How to Make Lemon Sauce

  • Infuse the Sugar: Rub the lemon zest into the sugar with your fingers. This enhances the citrus flavor.
Whisk the Base: Whisk together the lemon-sugar mixture, eggs, lemon juice, and salt until smooth.
Cook Gently: Pour into a saucepan and cook over medium-low heat, whisking constantly.
Cook until the mixture slightly thickens and coats the back of a spoon, about 6–8 minutes. It should remain pourable.
    Do not let it boil.

  • Add Butter: Remove from heat and whisk in butter until smooth and glossy.
Strain (Optional): For a silky finish, strain through a fine mesh sieve.
Let cool slightly before serving. The sauce will thicken a bit as it cools but will remain spoonable.
