Cut the potatoes and half.Wash, drain, and bring to a boil over medium-high heat, in a large pot of water. Cook until just tender. Cut the cherry tomatoes into quarters. Cut the cucumber into small cubes or dice. Cut the red onion into slices or dice.
NEXT
Finely chop the parsley and the Mediterranean Greens. Cut Olives in halves. Cut Cornichons or Kosher Baby Dills (Pickles) into small cubes, or dice. Combine all of the ingredients in a large bowl. Add the Extra Virgin Olive Oil and seasonings. Keep in the fridge and enjoy!
