In a large wok or large skillet, heat the oil over medium-high heat. Cook the Sausage until lightly golden brown.

Without removing the sausage, add the Celery and the green onions. Allow to cook. Stirring constantly to avoid sticking at the bottom of the pan. Next, add the onions and the Cajun seasoning.

Stir well to combine. Deglaze with soy sauce. Reduce the heat to medium.

Then add the cooked white rice, parsley, the remaining Cajun seasoning, and the cooking wine. Reduce the heat to low. Add in the remaining cooked white rice, the rest of the soy sauce, and season to taste with salt and pepper.
