Pate Kode

Pate Kode is a Haitian Street delicacy that is easy to make and delicious. Don’t underestimate the homemade pastry, it’s quite versatile and makes some delicious patties.

Ingredients

For The Dough

  • 2 Tbsp. Vegetable Oil
  • 2 Cups All Purpose Flour
  • Cup Warm Water
  • 4 Cups Vegetable Oil Or 1 quart for frying

For The Filling

  • 2 Tbsp. Vegetable Oil
  • 2 Garlic Cloves Minced
  • Half Bell Pepper Chopped. You may use orange, red, yellow, or green
  • 1 Green Onion Chopped
  • 1 Cup Shredded Cabbage
  • 2 Tsp. Cajun Seasoning
  • ¼ Tsp. Kosher Salt
  • 1 tablespoon Fresh Parsley Chopped
  • 1 Tbsp. Water

Instructions

Prepare The Filling

  • In a large skillet, heat the oil, then add garlic, bell pepper, green onion. Cook for abou 2 minutes; stirring occasionally.
    Then add the cabbage.
    Next, add in the cajun seasoning, salt, parlsey, and water. Stir well to combine. Cook until the vegetables are soft on medium low heat. 
    Once the vegetables are soft, remove the vegetables from the stove/heat. Set aside.

Prepare The Dough

  • In a large bowl. Add the flour.
    Create a well and add in the oil and half of the water. Mix until just combined.
    Add the remaining water and use your hand to knead the dough. The dough should be wet enough where all of the flour incorporated, but dry enough where it does not stick to your hand.

  • Roll the dough in a small log. Then cut the dough into 4 even pieces. 
    Taking each piece, flatten the dough. Use a rolling pin to make it easier. 
    Take a forkful or a spoonful of the filling and place it in the center of the dough. Take one half of the dough and fold it over.

  • Press the edges with your finger to secure the dough, then use a fork to press down on the edges to lock and seal the edges. 
    Place the patty in a hot oil and cook for 5-8 minutes or until golden brown on all sides. 
    Repeat the steps with the remaining dough and enjoy as a side or snack.
