On a flat surface, gently roll out the pastry dough to extend it.
Melt the butter and set aside.
Place the cookie on the dough and use a pizza cutter or cookie cutter to cut out the circle. Be sure to make the circle big enough to tuck the dough under the cookie.
Cover each cookie with the dough, the use a pastry brush to apply the butter all over the covered cookie.
Place in the air fryer and air fry for 12 minutes on 350 degrees, flipping halfway to cook evenly.
Sprinkle with powder sugar (optional) and enjoy!

A large cookie cutter works great for cutting out the dough as well.If you need to store leftover ones, I recommend a zip lock bag and put them in the refrigerator. Reheat them in the oven for a few minutes on 350 degrees.
