This sweet Watermelon Blueberry Salad combination is exactly what you need as a healthy snack on a light day. Fresh cubed watermelon tossed with blueberries, and maple syrup with fresh lemon juice. Ingredients

  • 1 cup Watermelon
  • ½ cup Blueberries
  • 1 tablespoon Fresh lemon juice
  • 1 tablespoon Organic maple syrup
  • 1 tablespoon Fresh mint for garnishing, but optional

Instructions

  • Wash and pat dry the blueberries. Cut the watermelon into cubes or desired size. Place the wateremlon and blueberries in a bowl.
  • Then add the lemon juice, maple syrup, and mint. Toss to combine and enjoy!

Notes

For Watermelon Blueberry Salad Recipe: 

  • How long does the salad last? I would recommend up to 5 days in an airtight container in the refrigerator.
  • Can I add honey or sugar? This is completely up to you. But I find that it is best with maple syrup. You can also use honey. 
  • Can I add cheese? YUP! Completely your choice. Feta cheese is great with this salad, as well as goat cheese.
  • Why add mint? Mint provides a fresh earthy taste. It is used to enhance meals, salads, and juice. 
  • Why does the salad release extra liquid? Be mindful, watermelon release a lot of juice; this can water down the taste in the salad if let sit for too long.
