Easy Breakfast Potatoes Recipe

These are the most flavorful Skillet Breakfast Potatoes you’ll ever prepare. Infused with natural flavors from the onions, garlic and thyme, these pan-fried breakfast potatoes are all you need to complete any breakfast meal. They are ready in less than 30 minutes.

Ingredients

  • 4 Idaho Potatoes Diced
  • 2 Garlic Cloves Minced
  • ½ Cup Diced Onion
  • ¼ Cup Olive Oli
  • 1 Tsp. Kosher Salt Or to taste
  • 1 Tsp. Ground Pepper Or to taste
  • 5 Sprigs Thyme

Instructions

  • Wash and cut the potatoes into bite sice, or diced. Set aside. Dice the onions and set aside.
  • Add the potatoes to the heated oil skillet. Cook on medium-low heat for 10 minutes, covered. Stirring occasionally to avoid burning.
  • Remove the cover, add the onions, salt and pepper, thyme, stir and cook uncovered for an additional 10 minutes. Stirring occcasionally to avoid burning.
    Remove from heat and serve as a side.

Recipe Tip:

  • You can boil the potatoes before frying them for 10 minutes. This will help ensure that the potatoes are fully cooked. Then fry them for an additional 10 minutes with the other ingredients.
