Instructions

  • Already Baked Cake: Prepare your cake, or red velvet Bundt cake and allow it to cool completely, then cut the cake into portions and transfer it to a large bowl to crumble with a fork, or a food processor.
Add Cream Cheese: Add the cream cheese to the cake.
Crumble or Process: Crumble the cake in a large bowl with your hands or two forks. Or for best result, add the cake to the food processor along with the cream cheese and pulse a few times.
Check for Consistency: Check the cake after a few pulses to see if the cake is starting to stick together. Should look wet. Add more cream cheese if needed.

  • Transfer To A Bowl: Transfer the dough into a bowl and set aside. Use an ice cream scoop or a spoon to scoop out equal portions of the cake mixture. Roll into balls and set them aside on a cookie sheet lined with parchment paper.
Melt The Chocolate: Melt your chocolate in a bowl in the microwave. When melting chocolate in the microwave, it is best to heat the chocolate in 30 second increments and stir after each heating session.
Use a fork to transfer each ball into the chocolate bowl one at a time then set aside onto the cookie sheet once completely coated.
Sprinkle with red or white sprinkles immediately on top. Repeat the steps as necessary. Transfer the truffles to the refrigerator and allow to set for 1-2 hours; best overnight.
