Ingredients

  • 2 Tomatoes
  • 1 Yellow Onion Red onions will also work
  • 1 Red Bell Pepper
  • 3 Garlic Cloves
  • ¼ Cup Olive Oil
  • Juice From 1 Lemon
  • ½ Cup Cilantro
  • 3 Honey Mangos About 2 cups
  • 1 Habanero Pepper Seeds remove; optional
  • 1 Tsp. Chili Powder
  • 1 Tsp. Kosher Salt

Instructions

  • Place the tomatoes, red bell pepper, garlic, and onion on a baking dish or cookie sheet. Broil for 5-10 minutes or until charred.
    Remove the vegetables from the oven and set aside.

  • In the food processor, add the the oil, lemon juice, roasted vegetables with the liquid, cilantro, mangos, salt, and chili powder.
    Pulse a few times until well combined but still chuncky.
    Serve with Chips and enjoy!!!!
