This skillet mushroom chicken recipe is paired with our homemade cheesy cheddar grits, making it ideal for a tasty weeknight meal or an easy Sunday meal.
Season the chicken with salt and pepper. Mix well and set it aside.Over medium heat in a large nonstick skillet, add the olive oil. When heated, add the chicken in batches. Cook until lightly golden and repeat the process until you have cooked all the chicken cubes. Transfer the cooked chicken cubes to a plate and set aside.Next, in the same skillet add the butter and when melted add the onions, bell pepper, and garlic cloves. Mix well and cook for 30 seconds.
Then add the dry basil and parsley flakes. Stir to combine. Then add the mushrooms. Stir and cook for 5-6 minutes; stirring occasionally.Add the white wine vinegar followed by the chicken, paprika, and chicken powder. Stir well to combine and allow to cook for an additional 5-8 minutes.Serve with cooked grits and enjoy.
