Ingredients

  • 1 Over-Ripe Banana; Peeled
  • 2 Large Eggs Room Temperature
  • Juice from ½ Lemon or about 2 Tbsp.
  • 2 Tbsp. Granulated Sugar
  • 2 Tsp. Vanilla Extract
  • 1 Cup Milk
  • 1 ½ Cups All-Purpose Flour
  • 2 ½ Tsp. Baking Powder
  • ¼ Tsp. Baking Soda
  • ½ Tsp. Kosher Salt

Instructions

  • In a medium size mixing bowl, begin by smashing the banana with a fork or handheld mixer.
    Add in the eggs, lemon juice, sugar, vanilla extract, and milk.
    Continue whisking or blending until liquify.
    Add & whisk dry ingredients: In the same bowl, add in the flour, baking powder, baking soda and salt. Gently whisk the ingredients together until well combined and there are no visible lumps.
    Mixing Ingredients
  • Preheat cookware and cook the pancake: Preheat a medium size cast-iron skillet or an electric griddle over medium-high heat. You may also use a large non-stick skillet.
    Add the butter and oil. Then ladle batter onto skillet or griddle. Scoop batter with a ⅓ measuring cup at a time and pour the batter onto greased skillet or griddle.
    Cook the pancake until noticeable bubbles begin to appear on the top surface and bottom is golden brown. Flip the banana pancake and continue to cook until opposite side is golden brown. Serve right with your banana slices and desired fruits.
