Ingredients

To Make Seven-Layer Noodle Salad:

  • 2 cups cooked EZ Peel shrimp
  • Thai kitchen thin rice noodles
  • 3 cups matchstick carrots
  • 3 large boiled eggs
  • 1 ½ cups cherry tomatoes cut in in half
  • 3 cups broccoli florets
  • 3 cups shredded red cabbage
  • 1 tablespoon butter

Make Creamy Peanut Sauce:

  • ½ cup creamy peanut butter spread
  • ½ cup Hoisin Sauce
  • 2 Tbsp. Sriracha hot chili sauce
  • Pinch salt

Instructions

To Make Seven-Layer Noodle Salad:

  • Cook the noodles according to the direction on the box then place in ice bath. 
  • Peel, devein (if possible), and cook the shrimp in a medium saucepan with the butter for 3 minutes. Boil the hard eggs or cook for 5-7 minutes, cook the broccoli florets for 7 minutes, leaving them a little crunchy. Allow cooling.
  • Assembling in the order listed below: 
    1. Noodles
    2. Carrots
    3. Red cabbage
    4. Broccoli
    5. Cherry tomatoes
    6. Shrimp
    7. Eggs
    Garnish with fresh mint leaves.
    Simple as that and enjoy!

  • Place the ingredients in a large bowl, whisk to well combine. Set aside or in the refrigerator.
