Commonly known as lady fingers, these Savoiardi lady fingers are delicious and incredibly easy to make and certainly are agreat addition to your coffee and or tea spread.
To begin, separate the egg yolks from the whites. Use a hand mixture and mix egg yolk, sugar, and vanilla until light. Next beat egg whites until stiff. Fold egg whites into yolks in 2-3 folds.
Sift the flour, cornstarch, and baking powder into a bowl. Add the pinch of salt. Fold in the dry ingredients to mixture until completely combined. Place batter into a pastry bag with a medium tip and make sticks about 2 inches long.Bake at 400 for 10 minutes until golden. NO MORE THAN 12 minutes. Let it rest for 5 minutes or until cool before serving.
