Preheat the oven to 325 degrees.
FOR THE FILLING: In the bowl of an electric mixture, mix together the cream cheese, sugar, and eggs (one at a time), 1 Tsp. lemon juice, 1 tsp. vanilla extract. Pour over the oreo pie crust.
Bake for 35 minutes or until the center is set by testing it using a toothpick. Finally, leave the cake in the oven for an additional 30 -45 minutes.
Refrigerate for several hours (about 5 hours). Once completely cooled, it's time to cut your bite-size cheesecake. Use a cookie cutter to cut into the cake in size bite circles. Cover each individual cheesecake bites with the frosting, then garn with the M&M’s.
FROSTING: In an electric mixing bowl, mix together the butter, lemon juice, salt, 1 tsp. lemon juice, 1 tsp. vanilla extract, and 1 cup confectioner's sugar – add small amounts of the remaining cup to your desired consistency.
OREO CRUST: Using a food processor or a plastic bag, finely crush your cookies. Mix the cookie crumbs and melted butter together. Press crumbs into the bottom of a 9″ pie plate. Bake the crust for 10 minutes at 350°F then cool completely before adding the cheesecake filling.
