Heat the olive oil in a large skillet or saucepan over medium heat. Add the shallot and cook until soft, this process should take about 4 minutes.
Add the mushrooms and cook until soft, this process will take about 8 to 10 minutes. Stir in the garlic and thyme and sage.Add the flour over the mushrooms and stir for 1 minute.
Add the broth, vegetable cube and black pepper. Simmer until thickened over low heat, whisking often; this should take about 20 minutes.Serve warm over mashed potatoes, white rice, or cauliflower mashed. Enjoy!
