    There’s something about chowders that always scream home and comfort. Especially when it’s cold outside. 

    Aside from tomato soup, this is another soup I can have all year-round. But, my favorite time to make this soup is after the kids are done playing outside in the snow. Although we have served this soup during the summer. I am surprised it is now surfacing on the blog. 

    Since its soup season, there’s no need to make you wait any longer. 

    About this Vegetable Corn Chowder Recipe

    The holiday season is upon us. So why not create something different and unexpected for your guest to serve either as an appetizer or as part of a main dish, while the holiday jingles play in the background. 

    If you want it to be meaty, you even add turkey breastto it to jazz it up some. If you are not reading this during the holiday season, that’s perfectly fine. You can still cozy up with a bowl while watching your favorite show on Netflix. Either way, it’s a win-win! 

    This corn chowder is rich with vegetables. It has a mixture of the Birds Eye® Steamfresh Super Sweet Corn and the Birds Eye® Mixed Vegetables. You’ll love the rich, creamy you’ll find in this soup. The Birds Eye® Mixed Vegetables also contains no artificial preservatives, flavors, or colors!

    Corn Chowder Recipe Ingredients

    • Birds Eye® Mixed Vegetables in freezer

    What’s unique about this corn chowder recipe is the amount of veggies that are included from the Birds Eye® Mixed Vegetables. Even if you do not feel like opting in for this sweet corn chowder recipe, you can enjoy the mixed vegetables as they perfectly cooks in the bag & ready in minutes, plus it’s Kosher certified.

    It also includes the warm traditional flavors from the following ingredients listed below, to name a few. 

    • Bids Eye Corm and the Birds Eye Mixed Vegetables– the stars of the show! These are already packaged and you can find them in the frozen section at Walmart.

    • Sweet potatoes– These potatoes are found in the international market. They have a reddish color, but white when peeled and is a crossed between a traditional sweet potato and a russet potato in terms of sweetness. This will help give it an extra sweet flavor and will provide a chunky texture with the other mixed vegetables. 
    • Onion and garlic– will help to enhance the flavor and balance out the flavor from the sweet potatoes.

    The coconut milk will make the chowder rich, creamy and smooth.

    How to Make Vegetarian Corn Chowder

    • Blend one bag of the Bird’s Eye Super Sweet Corn with the coconut milk in the food pressor. Set aside.
    • Sauté onion and garlic: Melt butter in a large pot over medium heat. Add the onion and diced potatoes and cook for 2 minutes on medium-low heat, stirring frequently.
    • Next, you will need to make the roux: Add in the flour, garlic, and cook for 1 ½ minutes. While whisking, slowly pour in the corn and milk mixture. Cook for 2 more minutes.

    • Then, add 1 bag of the Bird’s Eye Mixed Vegetables and season: Stir in Bird’s Eye Mixed Vegetables and season with salt and pepper to taste.

    • Simmer the soup: Adjust the heat to high and bring to a quick boil. Then reduce the heat to medium-low and allow to simmer, stirring occasionally. Cook for an additional 15 minutes or until the vegetables are softened.

    • Serve warm and enjoy. 

    What to Serve with Vegetarian Corn Chowder?

    This soup is hearty enough by itself. But, if you should add more to it, you may serve it with:

    • French bread (for dipping of course)
    • Garden green salad

    • 1 pkg. Bids Eye Super Sweet Corm

    • 1 large White Sweet Potato or russet potato, diced
    • ¼ cup Onion diced

    • 1 can Coconut milk
    • Salt and pepper to taste

    Instructions

      I love the Steamfresh veges and buy them all of the time. I’ve never made chowder with them though, what a great idea! I’m making some today!

      Wow frozen veggies really make this chowder easy to prepare. There is nothing like a filling, hearty chowder on a cold Winter’s night. And corn chowder is my favorite!
