This Seven-Layer Asian Noodle Salad is served with creamy peanut sauce. It takes no real effort. It is easy and quick. A crowd pleaser for sure!

Typically, seven-Layer salads include iceberg lettuce, tomatoes, cucumbers, onions, sweet peas, hard boiled eggs, sharp cheddar cheese (and bacon pieces). My version of this eye-catching Asian noodle salad will be your new favorite crowd pleaser and will inspire you to create your version of seven-layer salads.

I often make my cowboy caviar when entertaining guests during the summer. However, periodically I’ll throw in a twist. Something that no one is expecting. There are times it is my Pikliz served with plantains or BBQ chicken, this easy Asian noodle salad is another dish that often makes it to the serving table.  A great way to impress your guests. Perfect for any season. Your guests will think you have been in the kitchen all day preparing the salad and making it pretty just for them!

  2. Can be served warm. Yes. If you are not a fan of cold pasta salad, then feel free to warm up the noodles before assembling all of the ingredients. I have served it both ways. However, my personal favorite, of course, is to eat it cold.
  3. If you are looking for easy meals to serve at a gathering, this Asian noodle salad must be added to the list.
  4. Great dish for summer cookouts.
  5. You can make the Asian noodle salad any way you’d like; feel free to add chicken, shrimp, or even steak.
  6. Taste incredible cold and at room temperature.

How to Make Seven-Layer Noodle Salad:

The method is very simple. You will need the following ingredients listed below.

  1. 2 cups cooked EZ Peel shrimp
  2. Thai kitchen thin rice noodles
  3. 3 cups matchstick carrots
  4. 3 large boiled eggs
  5. 1 ½ cups cherry tomatoes cut in in half
  6. 3 cups broccoli florets
  7. 3 cups shredded red cabbage

Simply cook the noodles according to the direction on the box and place in an ice bath. Peel, devein (if possible), and “cook” the shrimp. Boil the hard eggs. I cooked the broccoli florets for 7 minutes, leaving them a little crunchy. Allow everything to cool, get your prettiest glass bowl or trifle bowl to start assembling. Simple as that!

How to Make Creamy Peanut Sauce:

You’ll need the following ingredients listed below.

  1. 1 cup creamy peanut butter spread
  2. ½ cup Hoisin Sauce
  3. 2 Tbsp. Sriracha hot chili sauce
  4. ¼ cup soy sauce
  5. ¼ cup water 1 tbsp. Worcestershire sauce

Place the ingredients in a large bowl, whisk well to combine.

Prepare the Asian noodle salad:

In a large bowl or trifle bowl, place the cold noodles at the bottom of the bowl. Then start layering in the order of your choice or you may follow my method.

  1. Noodles
  2. Carrots
  3. Red cabbage
  4. Broccoli
  5. Cherry tomatoes
  6. Shrimp
  7. Eggs

Garnish with fresh mint leaves.

Asian noodle salad recipe notes:

  1. To save time cook the eggs, broccoli, and shrimp the night before. Place in the refrigerator to use the next day when you are ready to assemble the noodle salad. Cook the noodles as you prepare the items as the noodles do not require a significant amount of time to cook.
  2. Prepare the peanut Sauce the night before to save time.
  3. Use a blender to help combine the ingredients for the peanut dressing.

Ingredients

To Make Seven-Layer Noodle Salad:

  • 2 cups cooked EZ Peel shrimp
  • Thai kitchen thin rice noodles
  • 3 cups matchstick carrots
  • 3 large boiled eggs

Make Creamy Peanut Sauce:

  • ½ cup creamy peanut butter spread
  • ½ cup Hoisin Sauce
  • 2 Tbsp. Sriracha hot chili sauce
  • Pinch salt

Instructions

To Make Seven-Layer Noodle Salad:

  1. Cook the noodles according to the direction on the box then place in ice bath. 

  2. Peel, devein (if possible), and cook the shrimp in a medium saucepan with the butter for 3 minutes. Boil the hard eggs or cook for 5-7 minutes, cook the broccoli florets for 7 minutes, leaving them a little crunchy. Allow cooling.

  3. Assembling in the order listed below: 

    1. Noodles

    2. Carrots

    3. Red cabbage

    4. Broccoli

    5. Cherry tomatoes

    6. Shrimp

    7. Eggs

    Garnish with fresh mint leaves.

  1. Place the ingredients in a large bowl, whisk to well combine. Set aside or in the refrigerator.
